Posted - Mar 17 2009 : 5:20:35 PM Hi. I have even frozen pancake batter and used it 2 weeks later. It is a bit thinner...just beat it up and use. Yum.

Posted - Mar 17 2009 : 06:52:41 AM I have left regular pancake batter in the refrigerator for up to 3 days - I do stir it everyday if not using - I actually prefer batter that was made the day before - if you are using sourdough, then the batter in my experience needs to be used right away. I make all into pancakes, then freeze those we don't eat. I put between layers of parchment paper, then into a ziploc freezer bag, when I take out of the freezer, I microwave in the parchment. They are as good as hot off the griddle. Hope this helps, remember this is from my experience only.
