I am in need of a really good pumpkin roll recipe. I really want to make my own this year. I do not like the buttercream center. I only like the cream cheese filling. Do any of you ladies have a delicious recipe you would be willing to share?

Thank you so much Heather! Thank you for letting me know about the walnuts because I would want to leave them out myself. I just need to grab the couple of things I’m missing from the store and I’ll give this a try.

Pumpkin Roll:
3 eggs
1 cup sugar
2/3 cup cooked or canned pumpkin
1 tsp lemon juice
2/3 cup all purpose flour
2 tsp ground cinnamon
1 tsp baking powder
1/2 tsp salt
1/4 tsp ground nutmeg
1 cup finely chopped walnuts

Cream cheese filling:
2 pkg cream cheese - softened
1 cup powdered sugar
1/4 cup butter - softened
1/2 tsp vanilla
additional powdered sugar

In a mixing bowl, beat eggs on high for 5 min. Gradually beat in sugar until thick and lemon-colored. Add pumpkin and juice. Combine flour, cinnamon, baking powder, salt, and nutmeg. Fold into pumpkin mixture. Grease a 15"x10"x1" baking pan and line with waxed paper. Grease and flour the paper. Spread batter into pan, sprinkle with walnuts. Bake at 375 degrees for 15 minutes - or until cake springs back when lightly touched. Immediately turn out onto a linen towel dusted with powdered sugar. Peel off paper and roll cake up in towel - starting with a short edge. Cool. Meanwhile, in a mixing bowl beat cream cheese, sugar, butter, and vanilla until fluffy. Carefully unroll cooled cake. Spread filling over cake to within 1" of edges. Roll up again. Cover and chill until serving. Dust with powdered sugar if desired.

Note - I left the walnuts out of mine and it was still good!

Let me look for the one I made a couple years ago. I don't remember for sure but I think it was a cream cheese filling. I'll try to find it and post by the weekend.
