I have some "elderberry jelly" (processed once) and some "elderberry-apple jelly" (processed twice) that didn't set up for me, so I guess what I actually have is elderberry syrup.

After reading another thread called "miraculous elderberries" I am thinking I should be taking this syrup every morning at breakfast to keep colds away.

But I am wondering if the Vitamin C content will be lost because of the heat of processing? What else is in elderberries that makes them so miraculous, and does heat destroy it too?

Check out the brand new issue of Small Town Living. There's an awesome article on elderberries including several recipes. The article starts on page 28.

Yes, I was just reading it! That Tina Michelle is amazing, she knows just what we're looking for! Nice article about you in there, too!

I assume that because the article says to use a steam juicer, heat is OK for the elderberries to retain their medicinal qualities?

You bet, Brenda. I just got a steam juicer this year at a flea market. Last year, I boiled them and then squeezed them by hand. That was a lot of hard work but the boiling did not seem to affect the medicinal quality of the berries. Using the syrup should work just fine.

It appears I won't have the opportunity to use my "new" steam juicer on elderberries this year. The bears have stripped every patch of bushes I know of.

Oh, I'm so sorry about your berries!

I was really disappointed this weekend too - we didn't get to the farm (5 hours away) for a few weeks to pick our apples, and although we don't expect a big harvest like we would if we took better care of the trees, we did expect more than the bushel of apples I picked from 20 acres of trees.... Boo hoo.

I missed the elderberries at the farm this year too. Everything was early this year, I think it was too hot and dry. There's always next year!
