STRAWBERRY BREAD
3 c flour 2 c sugar 1 lb strawberries 1 t baking soda 1 t baking powder 1 t cinnamon 1 t salt 1 ¼ c vegetable oil 4 eggs, beaten 1 cup chopped pecans (I usually leave them out, and it turns out fine).
Heat oven to 350. Combine flour, sugar, strawberries, baking soda, baking powder, cinnamon, and salt in a large bowl. Make a well in the center, and add oil and eggs. Mix well. Stir in pecans. Pour into 2 greased loaf pans, and bake about 65 minutes.

Sounds yummy! Thanks for the recipe. Gonna have to try this one. I love to bake and this will give me a good excuse to turn the oven on in this horrible humidity. Take care, Marcy

Sounds delish. I have a recipe for strawberry cupcakes that I haven't tried yet, but I think I may try the bread first!

Sounds yummy! i have my own strawberry plants this year but I put them in one of those "pouches" that hang and I'm not getting many...not a 1 pound that's for sure..just enough for my cereal about 1/week! I took down the recipe though and may have to break down and buy some...YUM! Thanks for the recipe, Amanda! I've never made strawberry bread before...I bet it's wonderful...I love berries of any kind!

Oh, sorry. I transcribed the recipe from a newspaper thing and left out the info. I usually halve or quarter them, or if they're really huge, I cut them in more pieces. |
