We do "unstuffed pepper soup" too and love it. My personal favorite is a creamy wild rice soup, but hubby loves my cheeseburger soup! (not for calorie counters!)
Unstuffed Pepper Soup 64 oz. can tomato juice if I dont have it canned 1 lb. ground chuck browned and drained 2-3 medium tomatos peeled and diced 2-3 bell peppers seeded & diced (i use any color handy) 1 cup quick cook rice seasonings: salt, pepper, red pepper flakes for kick. I usually throw everything in a crock pot and let it go on low for the day. Its really easy, I'd like to see the other recipe so that maybe I can improve upon mine! Oh, I also do the same thing for Unstuffed Cabbage Stew... Use all the ingredients you would for stuffed cabbage, except shred your cabbage and load the crockpot!

Here is a link to the recipe I use for Stuffed Pepper Soup. I think that I usually add some onion in with the ground beef when I am browning it, too. And we top it off with some shredded cheese at the table. http://www.recipezaar.com/22349.
I bought a bag of wild rice at the grocery store a few months ago, just because I had never seen it by itself instead of in a rice mixture. It still hasn't been used because I am really not sure what to do with it. So, I guess I need a recipe for wild rice soup now, too! That sounds really good today as it is overcast and rainy here in Indiana. |
