I am up to my ears in cucumbers today - never expected it this soon. I have too many to just make usual fridge pickles. I have fresh dill here also.

Anyone have a recipe for me to use?

Found this one on Mother Earth News

Super-Good and Extra-Easy Dill Pickles
4 pounds cucumbers
3 cups white vinegar
3 cups water
1/3 cup salt
For each pint jar:
2 tablespoons dill seed
3 peppercorns
1 or 2 dried cayenne peppers (optional)

Wash cucumbers. Depending on your preferences and the size of the cucumbers, either leave them whole or cut them in half or into spears.

Combine vinegar, water and salt, and heat to the boiling point. Pack the cucumbers into hot, clean jars. Add dill seed, peppercorns and peppers (if desired). Seal the jars and process in a boiling water bath for 10 minutes. Makes 6-8 pints.

Note: For kosher dills, add 1 clove of garlic to each pint jar.

I make 3 day pickles, yes it takes 3 days to make. I have been making them for 30 years, and everyone that tries them loves them. I recieved the recipe from a lady that was then in her 70's so it is an old recipe. I have approx 40 jars from this year on the shelf now. Our cucumbers have produced like mad this year.

Day 1
Soak sliced cukes approx 5-6 lb in lime water (follow directions on bag of pickling lime for measurements)over night

Day 2
Wash cukes at least 2-3 times to makes sure all pickling lime has been removed
heat enough vinegar to cover cukes with about 4-5 lbs of sugar,heat just enought to melt sugar. add 1/2 jar of pickling spice and cinnamon sticks or ground cinnamon to taste. I use about 2 tablespoons of ground cinnamon. pour over washed cukes and let sit overnight.

Day 3
bring pickles to a boil, boil for 10 min, put in jars and process for 15 min in water bath.

That is just what I was looking for! Thank you Tina. I have a ton of cucumbers left over, even after making fridge pickles and relish. I need to get a few more supplies and may start those tomorrow. Thank you!

I don't know where you looked but they never have it at the grocery store where I shop. I buy mine at walmartor ace hardware. I usually never have trouble finding it. I think I read somewhere that calcium oxide could be purchased at the drug store and is the same thing, and it becomes pickling lime or calcium hydroxide when mixed with water.
