Crockpot beef stew...even though it's going to be a high of 60 today! I have potatoes and carrots to use up and tonight is Violet's ballet class, so we don't get home until about 7:30 or so. I don't even want to THINK about dinner at that time, so it will be nice to have it made. Tuesdays now until June are designated crockpot suppers or dining out!

I'm making "Texas Rice and Beans" for dinner. It's a recipe I got from my mom years ago. @Jonni - don't ya love the crockpot for nights like that? I've got some busy evenings this week and you've inspired me to make Beef Stew for one of them this week!

Tuesdays are tough for us, too. Church group for one child, while the other has to be picked up from wrestling practice at school (across town, same time as church group).
Crockpot to the rescue!! Beef stew sounds good!

We grilled burgers on the outdoor grill! It's in the 50's here this week. Crazy, but true.

Today (2-1) I and roasting a turkey with veggies.

Kristina, It was so warm here yesterday, too! DH grilled a steak and veggie packs outside. Lovely! Tonight is spaghetti with turkey meatballs...meatballs are already done.

We may just have roasted turkey and veggies leftovers tonight. I had planned to make a black eyed pea, collard and potato soup, but may make that tomorrow.

I do need to run out and get us some fruit too. Maybe clementines or apples for snacks and dessert.

Not sure about tonight--it's just me and the girly, so it will likely be something VERY simple. Last night, though, I made our favorite Jamie Oliver fish recipe for my father in law's birthday dinner: roasted white fish wrapped with proscuitto. It's seasoned with lemon zest, fresh chopped rosemary and black pepper, then wrapped with proscuitto and seared in the pan, finished in the oven for about 12 minutes. Serve with asparagus and a light lemon-pepper mayonnaise sauce, along with steamed new potatoes. Awesome, awesome.

Sorry, girls, did not change it to today's date until late. High winds caused the electricity to go out all morning, so I am late on everything I had to do today. Did not get to relax with my coffee and farmgirls this morning!

Due to the day, I had to get a pizza from our favorite little pizzeria.

Margo, your chicken tetrazini sounds divine. Tonight I had a meal in mind, but DD is down with a head cold, so I am making my Homemade Miracle Chicken Soup. I put lots of anti-viral herbs in it. I'll boil extra chicken and make some homemade chicken curry salad for sandwiches this week. It's a cold day here anyway. I think I will bake a loaf of homemade bread, too.

Last night I just threw a roast in the oven with some roasted potatoes and a salad. Tonight- stuffed peppers and mushrooms? (I can't eat the peppers.) Need to finish up some vegetables from the SuperBowl Sunday raw veggie tray!
