I have a small pork loin in the oven and am planning on baked potatoes and broccoli with cheese sauce for sides.

Vintage 1950 for supper tonight. Remember hamburger patties, potatoes, carrots, and onions wrapped in foil and cooked in the oven. Always has been one of my favorite things although I seldom make it.

Sara -- thanks for the idea; we're going up to the trailer tomorrow and I was pondering over what to have for dinner up there. I think I'll wrap chicken thighs and veggies in foil and toss them on the grill. Yummy and easy peasy cleanup. Now I just have to figure out what to have for tonight...

Judith your chicken foil packet sounds yummy. Have fun at the trailer.

I made four packets - one for supper and 3 for the freezer unless one or two of my sisters wants one.

Sara - I completely forgot about those! We called them Girl Scout packages since that's where we learned to make them. I'm putting them on the menu for this weekend.

Tonight is Italian beef sandwiches & handcut fries. I brought home Italian beef from my trip back home to Chicago.

Hi Ladies! I haven’t changed the date lately. I have been a bit MIA. Been sewing masks and just being with my little family.

Dinners have ranged from simple to three course. It seems so hard to get groceries here! Tonight is turkey burgers, done on the grill with a side of southern style greens. Last night was grilled steak with a side of sweet potato fries in the air fryer, and mixed veggies. For Mother’s Day, my dd made lemon chicken with a kale salad and ice cream sundaes.

About once a week, I make dd’s fave which is the Air fryer chicken fried rice. We also had Danish food recently. Night before last was chicken in cherry sauce with a side of pasta salad.

Deb, your sandwiches sound so good! Sara, I love hobo foil packets, but we usually do them on the grill. :)

Missed you all. Hope all is well.

I made MaryJane's Triple Berry Cobbler last night from her "Cast Iron Kitchen" cookbook. It is delicious! A great way to use all those delicious organic fresh berries that are on sale in the stores right now. Happy cooking & baking to all!

Dawn, that cobbler looks amazing!

Sara, Italian beef sandwiches are a Chicago favorite. Basically it's very thinly sliced roast beef cooked in au jus with Italian seasonings. You serve it on Italian bread that gets soaked in the au jus so it's really juicy, add the beef and cooked sweet peppers. I think we'll have burgers on the grill tonight along with a pasta salad. Going to get steamy here over the next few days. I feel like a summer-ish kind of meal.

Dawn, that looks soooo good! I was thumbing through all of MJ’s books yesterday. I think I may need to add that cobbler to my list this week. Another great recipe of MU’s is the Saturday Farmgirl cake. I love that one so much!

Grocery shopping here is still like being a pilgrim and going hunting in the woods for dinner. Still can’t find vinegar,cleaners, most baking supplies, or toilet paper. It was looking better this week, though, than before. I made Chicken with Cherry Sauce, with sunshine carrots, with a side of pasta tossed with olive oil, lemon, tomatoes, and capers. Spice cake for dessert. Another dinner was a pot roast with sweet potatoes roasted in the air fryer, with a new recipe of roasted corn on the cob, made with sliced lemons and garlic. Very good! The next night, it was bolognese sauce, and a side salad and broccoli. Last night was “nibbles” because we made a big lunch and then nibbled fresh bread I made that morning with a slice of liverwurst. Dessert was fresh strawberries with cream (I had almond milk). Today is warm and sunny. I am making chicken, grilling it with lemon juice, lemon thyme, and fresh oregano. On the side, I will do a cucumber/goat cheese/basil/tomato salad tossed with red wine vinegar. Promised Hubs a homemade cheesecake. YUM! What is on your table?

My favorite 100+ degree dinner is salad made with chopped tomatoes, green onions, green olives, grated cucumber, garbanzo beans, chopped pickled beets, and feta cheese served with pita or flat bread. A great no-cook meal.

Lunch today was out of the pantry. A stew of one pint eye of the goat dried beans; one pint pie pumpkin I put up last fall; onion, Thai red curry paste, dried Italian oregano, and my garlic powder. I was happy with the way it came together.

Tonight was Italian Artichoke & Gouda cheese brats and corn-on-the-cob... quick & easy peasy dinner..
Dessert was Flan, and no, not home made... lol! home girl here, don't do home made Flan... lol!

OK, so yesterday was Brats.. today I made cast iron skillet cooked Salmon burgers, garnished with lettuce, tomatoes and avocado.... they were yummy but my house smells! uugh! got a pot of simmering water with vanilla and lavender essential oils to diffuse the fishy odor.
Next time,, I will put the salmon burgers on the BBQ grill,, I would have today, but it has been raining all day... bur next time for sure!

Friday night I made the peach slab pie from our latest MJF magazine. With just two of us, I mad half of the recipe and put it in a smaller pie pan. Man it was so good!!!

OMG! I WANT PIE NOW! Everything looks so good. I am sorry that I haven’t been on the thread much and changing the date. Things were a bit crazy with my daughter’s graduation and things, and also it was hard to write about dinners when it has been difficult to find full groceries in our area due to Covid. Things seem to be normalizing.

I made a lasagna the other night. Last night was a big, yummy, crunchy salad. Tonight is simple - potato gnocchi, sauce, and a side of sautéed garlic scapes with onions. For dessert, ice cream malted shakes. Did I tell you I got a vintage malt maker? I wanted to find one from the 50’s but hubs found a while one on eBay, with a new cord and running great. I did not know until later that it is from the 20s! But it works well, as long as we use light ice cream (slow churned). Bought malt powder and the shakes come out so delicious!

I like lamb but it's rare in this part of Texas and expensive. Aldi has the best prices when they get it in but that's seldom. This week they offered boneless leg of lamb so I ordered two yesterday. My shopper said he got the last two. I plan on roasting one today with MJF Indian blend. Will make lamb stew or Shepherd's pie out of leftovers. The other I will cut up for lamb chops to grill on my sister's gas grill. In a couple of weeks we plan on grilling for lunch and our freezers.

Cooking lamb patties to have burgers today and freeze the rest.

Today or tomorrow I'll make lamb hash and use leftovers for Shepherd pie.

Lamb is hard to find around here, too. I have a Middle Eastern recipe I like to make and always have a hard time finding ground lamb for it.

When we were in Iceland we ate a lot of lamb. More sheep than people over there. Beef was hard to find, but lamb and seafood galore.
Works for me. LOL
