I have also made a Violet Syrup using the infusion in place of water, lemon juice and sugar (simple syrup). I like to add it to lemonade or club soda along with ice cubes with pansies or violets in them :) Or make Italian Creme Sodas with it :)
Here it is:
Violet Jelly
1 quart violet blossoms (packed), you will want to look for blossoms that are opened 2½ cups boiling water
Cover and steep for 24 hours. You will want the color to be a darker blue, this will produce a very pretty color jelly. Strain the liquid through cheesecloth.
2 cups of violet infusion Juice of 1 lemon (about ¼ cup, well-strained, clear) 1 box powdered pectin ½ teaspoon butter 4 cups sugar
Combine violet infusion, lemon juice, pectin and butter and bring to a rolling boil. Add sugar. Return to a rolling boil and time for 1 minute. Remove from heat and ladle into clean jelly jars. Process in a boiling water bath for 10 minutes.
Yield: 4 half pints
This makes a delicious and pretty jelly. Enjoy!

My recipe is the same as Sharon's,but I struggle getting a good set with powdered pectin for some reason. Certo liquid pectin has never failed me (but requires 2 minutes boiling after adding it). So if the powdered fails you give the Certo a try. Violet jelly is the prettiest jelly and most subtle flavor. It is worth putzing around a little find the one that works for you!

I use the recipe from prairielandherbs.com also. I think they have one for dandelion jelly also.
