I am planning on making and canning homemade salsa this week. Been tweaking the recipe for years now and almost to where I want it to be. Will post pics later this week when I finish!

In the last 2 weeks I have put up stewed tomatos with onions and peppers, and dill pickles. I have a mess of green beens and salsa to to this week. I need to pick up more jars. Just don't seem to have enough around.

We have been canning pickles, tomato sauce and green beans. Hope to do some fruit jam and stewed tomatoes if we can get some more tomatoes!

Greetings from Washington State! I made 3 batches of plum jam (yum, just like my grandma used to make!) and last Saturday, we picked 70 lbs of blueberries. They are nicely stored in my freezer just waiting to be made into pancakes, muffins, smoothies and stirred into oatmeal this winter.

Beans and pizza sauce. getting geared up for salsa. have already done like 38 pints of jams (blackberry, peach and strawberry). my SIL has done over 70 quarts of grean and yellow beans! they have 4 boys, so they eat alot of food.

Would you share your plum jam recipe? We planted a plum tree a few years ago, and I would love to start collecting recipes that include plums.

Stephanie, I love your ice box! My parents used to have one too, but they gave it to my older brother. Boo! ;)

Lisa, the plum jam sounds wonderful! 70 pounds of blueberries? That's amazing! Do you go somewhere to pick them or do you have blueberry bushes?

I have been doing blackberries. From 10 gallons of berries, I made freezer jam, cooked jam, and froze lots. There will be more this week. We also ate them for every meal. Pretty good with homemade ice cream.

Love all the pictures and the variety! Got my peaches all canned over the weekend. Tonight I am making my "famous" Organic Strawberry Jam, lol! You all make my mouth water!!! I want to make this new recipe for Basil Tomato jam, but I have tons of tomatoes...all green yet.

I actually have a good chicken recipe. I think it came from the Better Homes and Gardens cookbook years ago.

3 1/2 - 4 lbs chicken per quart w/ bone in OR 5 1/2-6 1/2 pounds per quart w/ no bone

Rinse the chilled, dressed chicken in cold water. Pat dry with clean cloth. Cut up; remove any visible fat. Boil, steam or bake chicken til medium done (pink color should be almost gone). Do not remove skin.
Pack chicken pieces loosely into hot, clean jars. If leaving bone in, place thigh and drumstick pieces w/ skin next to glass and fit breast pieces into center, leaving 1 inch headspace. If desired, add 1 tsp. salt for quarts or 1/2 tsp. for pints. Pour in boiling water or broth, leaving 1 inch headspace. Do rims and lids as normal. For bone in, process in pressure canner at 10 lbs. pressure (75 minutes for quarts, 65 minutes for pints). For boneless, process at 10 lbs. pressure (90 minutes for quarts, 75 minutes for pints). Boil chicken in a small amount of water for 15-20 minutes before using.

FYI- For some reason, I seem to have amassed a collection of pretty unusual (at least to me)canning recipes. Please let me know if you're interested. Id be happy to share!

I finished off canning peaches and peach bbq sauce yesterday. It looks like we are going to be picking some tomatillos today. I've never worked with them before, but I've found a few recipes to try.

This last weekend I put up 9 pints of blueberry jam and 21 pints of salsa. I could not find my brothers recipe, he makes a killer salsa. So I used the one out of the ball canning book and tweaked it a little. Put a pound of jalapenos and 2 tsps of DH's (HOT, HOT, HOT sauce). A little goes a long way. Oh does it taste good. DH went though a whole bag of chip....just tasting it!

I remember watching my Mom and Great Aunt can and freeze the bounty from our garden every year. I would love to try it out for myself. What is an easy recipe to make for a first time canner...and what equipment will I need?

Andrea, I would start out at this site www.freshpreserving.com Its a great resource and is pretty much the gold standard in canning. Myself, I foudn strawberry jam to be the easiest, but I think its more a matter of preference. Good luck!

My family went to a local U-pick today and had lots of fun. Brought home 128 pounds of peaches! Gonna be canning a lot of peaches in the next couple days! Can't wait to have a taste of summer in the middle of winter!

Up to my eyeballs in peaches and tomatoes. I chopped up all the "leftover" veggies in the fridge and basket to make a "soup base" full of vegetables. did stewed tomatoes with chilies. Spaghettie sauce with peppers and mushrooms. Need to finish up the peaches today, not sure I can get through 80 pounds though. =)

Last week I got a lot of crab apples from a friend. This week I canned several quarts in syrup, made apple sauce, spiced apple butter, apple almond butter, apple jam, and some really pretty hot pepper jelly that I can't wait to try. A friend lent me her juicer she got from Lee Valley, and that was nice to use. I canned about one and a half gallons of juice that I can use this winter maybe for jelly or whatever I'm not sure.

I canned salsa, tomato sauce, and potatoes. Froze shredded carrots for cakes as well. Will have more tomatoes to do Thursday. It is good to have the canning shelves filling up quickly. Just alot of work to get there.

Yesterday I made saurkraut, dried zucchini, and froze a dozen quarts of plums. I am impatiently waiting for tomatoes, and need to buy peaches. Sounds like you all are busy.

I was gifted a half bushel anaheim Peppers, plus I have some on my pepper plants. My plan is to do one batch of the whole peppers (for chile rellanos) slit down the side and seeds removed. These will be bottled in quart jars. The other batch will be chopped and canned in half pints for addition to soups and casseroles.

I also have a bag full of jalapenos. I think I will slice them and can them in half pints for use on nachos and such.

The Taylor house will be spicy tonight!

Oh, those Anaheim peppers would be great in salsa too. I am canning more Fiesta Salsa today, but don't have any. Even our jalapenos were not hot enough this year. I've got ketchup already reducing and have more to can. Maybe more relish as I have more cucumbers today.
