Your right Darlene, it is a lot of shrimp. Next month I will have all 3 kids and there families meeting us at a lake resort where we have rented cabins for a long weekend. One of our favorite meals is a low country boil. With 15 of us it takes a big pot and a lot of shrimp to add to it. Here is my pilaf recipe. It is pretty easy and basic.

2 tbsp. butter
1 onion, chopped
1 c. Uncooked white rice
2 c. chicken broth
1 tsp. salt
Preheat oven to 350 degrees. Butter a 1 qt. baking dish.
Melt the butter in a large skillet over med. Heat.sautee the onion until translucent. Stir in rice; cook until the rice is slightly golden. Pour in the chicken broth. Season with the salt. Simmer another 5 minutes. Transfer to baking dish.
Bake until the broth is completely absorbed, about 35 to 40 minutes. Fluff with a fork before serving.

This is my basic recipe. I have thrown in wild rice I have left over from other dishes (decrease white rice accordingly) a shredded carrot, a handful of frozen peas, green onions instead of a chopped one, fresh parsley, slivered almonds, pretty much whatever strikes my fancy at the time. I don't always cook it in the oven, sometimes I just simmer it on top the stove. Just depends what else I am making with it.

This time of year always reminds me of making ice cream when we were kids. Delaware has a big peach crop, and my Dad would pick peaches at a nearby orchard and make peach ice cream only once each summer. We had an old fashioned crank ice cream maker, and everyone had to take a turn. If you didn't crank, you didn't get any ice cream!

So, two questions: What's everyone's favorite ice cream flavor, and who has made homemade?

My favorite is peach, of course!

My favorite ice cream is Ben and Jerry's Half Baked ;) As for homemade, we try to make some each summer and I think our favorite is strawberry. I haven't tried peach ice cream yet. Peach picking is next month, so perhaps we'll try making some :)

Homemade Peach ice cream...oh yum!!! That sounds so delicious! I don't know if I have a favorite flavor. I love Edy's Vanilla Bean, and anything with PB and chocolate together. Unless we are talking homemade, then I like fresh fruits. Sadly, we haven't made our own in 5 years or so. :(

I know, Dad's peach ice cream was the bomb, as they say! I haven't had it in many years, but may try to make it this summer for my granddaughter.

Tonight we had a simple salad of potato, green beans and hard boiled eggs in a ranch type dressing spiked up a little with Dijon. It was really tasty!

My favorite flavor is Moose Tracks. A treat I only allow myself once a year. I will buy a carton on my birthday and enjoy a scoop until it's gone and than look forward to next year. We do make our own ice cream quiet often, I have a cuisanart ice cream maker, I just leave the pan in the freezer so when we want ice cream I just have to add ingredients and turn it on. Fresh strawberry is one of our favorites. I have never had to use the crank ice cream makers before, sounds like a lot of work was involved but I am sure so worth it!

Oh my homemade ice cream. We love it. I love any kind of fruited ice cream, peach, strawberry, cherry anything that I can put fruit in. Homemade is the best. We always had homemade when we were kids. Now that you can just pick it up in the store so easily it doesn't have the appeal it used to but store bought can never compare to homemade!

There are several companies that make a similar product, but I like Deans. It is a rich vanilla ice cream with a chocolate fudge ripple through it and mini peanut butter cups. Lots of calories in every bite. Just came in from picking strawberries, fresh pie is on the menu tonight!

Isabelle said food at camp was ok, better than the camp she went to a few years ago, but still not like home! She was wanting real food so badly! She complained they didn't eat enough meat at camp, but she was happy with tonight's menu. Veggie pilaf, greens, and homemade bread. I am not sure she is feeling real well, though. She ate dinner and headed to lay down. This morning she had a light rash on her belly, so I gave her a benedryl before church. Not the best idea! lol!
Then she said her throat was bothering her a bit. I had her spray it with silver. She mentioned that water helped it, too, and thought maybe it was because she hadn't drank as much water as she has been accustomed to. We shall see.

I hope your daughter is feeling better after what you have helped her with. You used silver for her throat? Do they sell that in the health food stores?

I made sort of a stew tonight with country ribs and onion soup mix and crushed tomatoes, peas, corn , green beans, carrots and wing sauce then I through some elbow roni in it and it is pretty good but I think cooked to long in the crock pot and the noodles are soft.
It is a big batch.

Darlene, the stew sounds yummy. I know what you mean about the noodles, I've always found doing any kind of pasta in the crock pot is very tricky. Except for this recipe I have for crock pot lasagna which is out of this world!

Tonight for us is whole wheat spaghetti with arugula, crusty bread and a bok choy salad.

Still debating what we are having tonight. Last night I totally cheated and pulled out a Baked Ziti that I had frozen last time I had made it. It was yummy, though I am still trying to figure out when I should stop cooking my pasta so that it doesn't get mushy after being frozen, especially with using gluten free pasta!

Lot's has been cooking around the Prevost-Meier household. My mother in law made some wonderful desserts for the graduation party! DH had some wonderful marinated chicken on a skewer ... yummy. The very little left over we had was delish! The salads all went. It's really great to have had just the right amount of foods. Having said that, we did panic a bit thinking we may not have enough food (more guest than expected - around 45 people) as the bowls were emptying but ended up being just the right amount. Not just I could ever plan it that way again! lol

tonight we are having thai grilled chicken, jasmine rice and some type of veggie... I made a quick salad out of our garden the other night that was just diced tomatoes and cucumbers, with salt, olive oil and cilantro. I might do that again tonight if I have enough cucumbers...
