Sandra, I would do salads and fruits all the time if I could get away with it. But, I have to cook for 3 meat and potatoes men.

So today we had Melt in your Mouth chicken and leftover salads from our picnic yesterday. It is very moist chicken when made this way. A low carb recipe that I found on a friend's blog and a keeper here at our house. What has everyone else been cooking?

Been covered up by peaches for the last 4 days. Picked them up at the local farm on Friday, made a peach cobbler for the 4th on Saturday and a batch of sugar cookies that looked like stars. Another peach cobbler on Sunday, with a big pot of Gumbo and rice.
And on Monday 15 jars of peach jam done. Still have a few more to do something with today. May just put them up in the freezer for a later day.

MMmm, peaches. They won't be ready here for awhile yet. Aldis had strawberries for 59 cents a quart. Nice ones too. Got 8 quarts today. Had strawberry shortcake for dessert tonight and will work on jam tomorrow. Just love on my cereal too.

Yummm....

Blueberries was my "up to my elbows" fruit. Made jam today! I had never made blueberry before. It is so yummy!

For dinner we had homemade mushroom pizza!

Jam making 101 here today. Made 7 1/2 pints so far with more to go. Granddaughter is here today so she has donned her apron as well and is learning. (she's 9) and she seems to be enjoying it.

Sweet Refrigerator Pickles
Makes 2 1/2 cups.
2 cups thinly sliced cucumbers (1/4-inch thick)
1/2 cup thinly sliced sweet onion
1 cup cider vinegar
1/2 cup sugar
1 teaspoon Celery Seed
1 teaspoon Mustard Seed
1 teaspoon non-iodized salt

Place cucumber slices and onions in medium glass bowl. Set aside.
Mix remaining ingredients in medium saucepan. Bring to boil on medium-high heat, stirring to dissolve sugar and salt.
Reduce heat to low; simmer 5 minutes.
Pour hot liquid and spices over cucumbers and onions. Cool slightly. Cover.
Refrigerate pickles at least 2 hours before serving.
Store in tightly covered container in refrigerator up to 2 months.

Denise, What a pretty little helper you had making that jam! We have been cooking for 170 senior high kids at our church camp this week, so have not done much else! Tonight we had spaghetti with meat sauce, garlic bread, salad and green beans. Some of the camp girls made Banana Pudding for dessert. It has been so much fun serving these young people.

Thanks Ruth! We actually ended making another batch so we ended up up with 15 half pint jars. Looks so nice and set up well too. Sounds like you are having fun serving and working with the young people. 170, that is a lot of people.

Denise, thanks so much for the recipe, I'm goin to make some tomorrow! You granddaughter is so lovely, and wears that apron well! Strawberry jam -- YUM!

Ruth, I wouldn't know where to begin cooking for all those kids! What other things do y out fix for them? Must be fun but exhausting!

Maryellen, I'm' up for pizza anytime!

Tonight I'm making an egg casserole that is a family favorite. We always have it on Easter morning, but we have it for dinner sometimes, too. I'm in heaven starting my day with Winnie's coffee! Look at this beautiful package!

I see Winnie is trying to move you to Fall mode there Amy. LOL!

If I liked coffee it would be an awesome flavor I am sure. The only flavor I can really do in coffee is spiced pumpkin and I can't do much of that.
