Sawdust Pie:
Combine in a large bowl:
1 1/4 cups sugar, brown or white
1 1/2 cups pecans, chopped
1 1/2 cups vanilla wafer or graham cracker crumbs
1 1/2 cups flaked coconut
1/2 tsp. cinnamon
1/2 tsp. nutmeg
7 egg whites, unbeaten

Stir until just blended. Pour into a 9 inch unbaked pie shell. Bake at 375 degrees for 35 minutes or until filling is set. Serve warm or at room temperature.

If you love coconut, this pie will blow your mind...
3/4 cup sugar
1 1/2 cups unsweetened coconut milk
1 1/2 cups whole milk
1/4 cup cornstarch
5 egg yolks
1/4 tsp. salt
1 cup flaked, unsweetened coconut
1 tbsp. butter
1 9" baked pie shell
1/3 cup toasted coconut

In a nonstick 1 qt. saucepan, combine 3/4 c. sugar, coconut milk and 1 c. milk. Scald mixture.
In a small mixing bowl, whisk the remaining 1/2 c. milk and cornstarch together to make a slurry. Whisk egg yolks with salt in a medium bowl. Temper yolks by adding 1/2 c. scalded milk mixture to yolks and whisk well. Add yolk mixture and slurry back into milk mixture and whisk vigorously over medium heat until thickened, about 2 minutes. Remove from heat and add coconut, vanilla and butter.
Whisk until uniformly incorporated.
Pour the filling into the pie shell. Cover the pie with plastic wrap and place in the refrigerator. Chill completely, about 2 hours.
To serve, top with whipped cream and toasted coconut.

DebbieK can you explain what exactly “scalding mixture” means? I’m worried it would be a burnt disaster for me, lol.

I was looking for a recipe this morning that I had saved and found this one in my file. I’m guessing it would taste like a sugar cream pie? You can’t go wrong with brown sugar and cream in my book…haha! But I thought the title was funny so I thought I would share.

Yes, I could definitely knit those socks, so easy and would take no time at all. Thank you Heather.
I love Amish Pie, and the name, nice they tell what they thought the origin of the name was. Thanks for sharing.

I thought this was perfect and how I would like to live out my old age.
Today my Neice Erin and I went to The Pottery Shop today. We picked out a piece of pottery and painted while we visited. I tell you I had so much fun girls and it was so great visiting with Erin and catching up. Erin chose a Mushroom to paint and I chose a little Dachshund Doggie. I painted it to look like My Bella Girl, it’s not perfect but that’s alright for my first time. Maybe my next piece will be better. But the quality time Erin and I spent together was priceless! I will post photos when they come back next week.

Yep... my 6 year old inherited that hair! (and proclivity to mischief for the sake of a good story)

Now that Spring has Sprung, does anyone have any favorite Spring Cleaning rituals?

I turned the clothes hangers in my closet around, figuring if I haven't worn (and reversed its hanger to the "normal" direction) by Fall, it is probably a good candidate for donation.

Christine - I don't have any rituals, but I love the satisfaction of doing a little deeper cleaning - like when I take down all the curtains and wash off the winter dust. I like your idea of turning the hangers around. I usually have an urge to purge in January. I went through my closet and dresser then. 4 bags went to the thrift shop in town!!!!

Well done, Heather! I'll put a reminder up around winter solstice to see if I can fill up a Santa bag too.
Does anyone deep clean their washing machine? Never done that but the green cleaning book I'm reading for one of the badges opens the whole book with that project.
