I canned 11 pints of pickled banana peppers. Time got away from me in the garden and half of my banana peppers had changed to orange and red. At least the jars look beautiful and colorful! I also made some sun-dried tomatoes. I ended up with a pint jar of them. There are many more cherry tomatoes waiting to go in the oven.

Great canning job Krista. That was alot of banana peppers. I have tomatoes ripening and will make rotel. Also rendering tallow.

Tallow is done and moving on to cooking chicken backs. My ma needed some stock, so got the nesco full. Finally pulled the elderberrys out of the freezer and have those in the dehydrator. Did not have alot this year, but it was some. I did put three gallon bags of apples in the freezer, sliced and peeled, and have a 2 quart jar of apple cider vinegar brewing.

Rotel got canned yesterday. Chicken stock is done, meat pulled. Will take it up to my ma's, as she wants to freeze some. I will can what she does not want. Keeping busy in the kitchen. Oh ya got my sewing room cleaned up yesterday. So maybe I can get back to doing something in there at some point.

How do you store your tallow?
I just pulled 7 jars of apple pie filling out of the canner - hoping to hear them pop soon! Also hoping the rain lets up so I can go get some peppers from the garden.

Heather I keep my tallow and lard in the freezer. I am not sure on putting it in jars and letting it seal. Alot of people do. My son did and he said it was good, so I don't know. Apple pie filling will be nice this fall. I put the pie filling in pint jars, and make small pies in my cast iron for the two of us. Also nice to use in a pie iron over the campfire.
