I just thought I would share a photo of my latest kitchen creation - "Rosewater Melting Moments". I made them for our church trivia night over the weekend & they were a hit. They are topped with dried rose petals!

One of the problems I have is cooking for two people. The kids have fled the nest and my partner is only home on the weekends. I found some smaller baking dishes at Costco (4" x 8" roughly) and started putting casseroles in them. I can put together however many casseroles I have ingredients for and freeze some of them to be baked later. In going through the freezer, I found I had enough pie cherries left to cover the bottom of my dish. I tossed them with a tsp of cornstarch and a Tbls of sugar (I used brown sugar). I then layered on a cup of granola (mine contained bits of chocolate and berries), and poured about a cup of cream (I used vegan cream) over the top. I baked is at 350F for 45 minutes. It's amazing!

For health reasons, my partner has to eat a more vegan diet, and changing the way I cook has been a challenge. This recipe turned out wonderful using all vegan ingredients and with be just as delicious using dairy instead.

Sherri, that looks really yummy!
It’s a challenge to scale back on cooking when you’re used to feeding more than 2! I have started putting half away in the freezer for later and it’s been working pretty well. I’ll have to check out those dishes from Costco…they are a great size!

Your cherry creation looks so yummy, Sherri! Cooking for a special diet can be a challenge, but you are up to it! I am sure that you will be able to meet your partner's needs in a tasty way! Have fun creating.
