If ya'll go to www.jabezfarm.blogspot.com Kimberly has a really good zucchini bread recipe posted. I am going to try it soon. I still need to post the bread recipe here. I will. I have my foot soaking in epsom salts right now. I stepped on a piece of glass a few days ago and it's starting to hurt. So I thought I better start soaking it.
I can't believe it gets that hot in MT, Suzanne. Do ya'll have this awful humidity to go along with it? That's the part I hate.
PeggyAnn, your garden sounds like it's doing good. I love squash. I am making a squash casserole for dinner tomorrow.

yes please i am looking for a recipe for good muffins i can change the flavor of a base mix. i like teresas lemon muffin. i am going to try it. with papa working yipee out of town. i need to make goodies for him for his lunches. he still takes a lunch and does not eat out. even when in a motel for a week. so always looking for good moist rich maybe not tooo fattening. thanks girls happy days sherrye

Excellent Zucchini Bread Recipe
1 1/3 cups sugar (can sub. honey or Sweet n low for part of it) 2 cups grated zucchini 3 eggs (can sub. egg beaters) 1 cup salad oil (can sub part applesauce like half n half) 3 tsp. Vanilla Directions: Mix these dry ingredients together 3 cups flour (can sub 1 cup of whole wheat or gluten free flour) 1 tsp salt 1 tsp baking soda 1 tsp baking powder 3 tsp cinnamon 1/4 tsp cloves 1/2 cup chopped nuts *optional* (but I like walnuts or pecans)
Beat in mixer or mixing bowl. Fills 2 small sized loaf pans or 1 large loaf pan. I like big loaves so, I always double the recipe.
Grease Loaf Pans or use some kind of oil spray.
Bake at 350 degrees for 1 hour or until done. Test with tooth pick in the center of the pan. If too gooey cook longer. Take out of oven, cool for 10 minutes, run knife along outer edge of bread, turn upside down to remove from pan and continue cooling.
Then sit back and enjoy!!!!

| Ah, the joys of canning and freezing. They are several weeks in the future for me. Last year I canned in October, canning tomatoes as they turned red in my house. We have a very short growing season here. I can tomatoes, stewed tomatoes, dry tomatoes, dry my herbs, freeze my herbs, freeze my carrots, brocolli, beets, and zukes. We are still eating greens but the brocolli is almost ready. Some tomatoes on vines, some blossoms, huge squash leaves but no blossoms yet. But they are all mulched with grass and newspaper. I have the recipe for the rosemary bread now.
Rosemary Peasant Bread
Dissolve 1 T yeast in 2 cups warm water with 1 T sugar.
4 cups flour 1 1/2 tsp salt 1 T olive oil 1/2 tsp garlic powder (I used a little more because I couldn't really taste it) You could even use chopped garlic or roasted garlic whole. Yum! 1-2 tsp fresh rosemary, chopped, plus some for the top of bread before baking. I also used a little more because I have it.
Add to yeast mixture. Stir til blended. Let rest 5 minutes. Stir again and add more flour if needed. Dough will be sticky and barely manageble. Do not knead.
Move dough to a greased bowl. Cover and let rise 1 hour.
Remove dough from bowl with oiled hands. Form into 2 round loaves and place on a greased pan. Spray top with oil and cover with plastic wrap. Let rise 1 hour.
Brush each loaf with beaten egg and lightly sprinkle with rosemary and course salt.
Bake at 425 for 25 minutes. Enjoy.
This is so good. It doesn't make a very high bread. This last time I made it I added Kalamata olives and big green olives stuffed with sun dried tomatoes. It was even better. You could add whatever you wanted to this I guess. Even parmesian cheese sprinkled on top would be good too. Anyway, just use that ole imagination. Also could use some whole wheat flour.

Oh sounds so scrumptious Kris! I can't wait to make it...but will have to until I get back from Seattle. I can smell it baking already though! :+)
Thanks for sharing the recipe and your suggestions Kris.
Just a side note girls...I made a file folder on my computer desktop just to store all the good recipes in that we have been sharing. Then they are right where I can easily get to them...when I want to pull one out and try it.

Yum to both bread recipes.
We have an announcement: two zuchinnis have started to form. My husband and I cheered today. this garden has worked very hard to get to where it can produce the warmer weather crops. And one tomato is starting to really get red. Suzanne |

I now have some spaghetti-squash growing, and some zucchini's forming off the flower and blossoms on the tomatoes...so, I am a happy girl too.

Peggy, that's a good idea about the folder. I have been copying recipes like crazy lately and have one of those file folder things that I have been putting them all in.
Suzanne, I am so happy for you! Yay, zucchini! I bet they are big enough to pick already. That first tomato is always the best one.
ANd you too Peggy. It's just weird to hear ya'll saying you are just now getting veggies when mine are almost done now. Just strange.

Well All you Midwest, Eastern and Southern Farm Girls must be out harvesting those gardens because nobody is on many of the Forums and threads just lately. Us Northern and Northwestern girls are still waiting for our gardens to produce something besides weeds. LOL If you could eat weeds we'd probably have a good harvest with all the rain that we have gotten.
Well, don't work to hard Ladies or atleast find a few minutes in between harvesting and canning to go out and play for awhile!

I get to weed tomorrow morning -- they've taken over the onion patch.
Our first red tomato tonight. It's beautiful and I just want to look at it for a while. It's a Silvery Fir tomato -- such pretty plants. We also have some sugar gold cherry tomatoes coming along nicely. But the squashes -- summer and winter -- are only now getting little fruits. Suzanne |

I don't think I will be doing much canning this year. My cows got in the big garden. They didn't like zucchini though. SO I still get a little of that. I have put 2 gallon bags of grated zucchini in the freezer. And about 7 qts of tomato sauce so far. But I went out today to get tomatoes and they are all so small. I did go ahead and pich green ones for fried green tomatoes for dinner. And picked 1 squash. I did get some okra too. So not much going on out there. It's all drying up. I hope we can get our tiller fixed for some fall gardening. I want greens and brussel sprouts and cabbage.
Suzanne, how exciting! That first tomato is so good. I hope you enjoy it. Are you going to share it with anyone?
PeggyAnn, there are lots of weeds that are edible. I think pig weed is good in salads. I know there are so many. There are books about edible weeds.

My husband and I shared the first red tomato. And we each had one sun sugar cherry tomato.
Tonight, I picked some carrots for dinner. I grew purple, white, yellow, red, and orange carrots. Very good. |

I've enjoyed a few tomatoes, have a head of brocolli ready to bring in, and peas that are ready to pick. We've had some strawberries and gooseberries galore. We won't have apples or cherries because we had a very early spring and a very late freeze. Killed the blossoms as they were setting fruit. Oh well.
My flowers are prettier this year than most years, probably because my garden is smaller so I'm caring for it all a little better.

Suzanne, that was very nice of you to share with the hubby. Your carrots sound really pretty and good. Do you can them? I canned 8 pints last year. Really east to do.
Carrie, I have 3 older apple trees and 4 newer ones. The older trees are full. One is an early June apple with the transparent skin. I still had lots in the freezer from last year. But I put about 10 quarts in the freezer already. I hate to see them go to waste. Then the other tree has the best apples I have ever eaten. They are very crisp, crunchy and so juicy. An older type. Not sure what the name is. Then a Granny Smith I think. It's more under a maple tree so doesn't bear very many. But what it does have are really good. I hope you get lots of good garden produce this year. Sounds like you are a lot later than us here.

Kris...I hope I never have to eat weeds of any kind...but I was totally making a joke. It is interesting to me though that there are books about edible weeds. I will check it out!

Hi All, I have not been able to find Garden Adventures and have had withdrawals! Missed reading about everyone's gardens. We had lots of tomotoes and zucchini, a couple of peppers and thats about it! We are away right now and it is very hot and dry at home, so it will probably be all done for the year.  Hope you all enjoy your gardens as much as we did. You can't beat that very first tomato! We had lots of rain today. It was great. We had gotten our 3 granddaughters and were going to the lake to swim and have a picnic. The closer we got to the lake the darker it got. We got there and everyone was leaving. The sky was dark and the wind was whipping all over. It started thundering and lightening was ripping across the sky. So we went to check out the campgrounds and wait it out. I fixed lunch and we ate in the car. It started pouring rain. Then it stopped awhile, long enough for the girls to swim about 45 minutes. The water was warm and it was cool outside by then. It was down to 74 from about 95. But it started to rain again so we headed home. It was a nice rain all over the place. We sure did need it. I can hear all the frogs all over tonight. They are happy.

We had a garden salad tonight for dinner: our lettuce (many kinds); pink, red and white radishes; many colored carrots (I blanch and freeze them); one tomato; and a small onion. I added some cheese and eggs and ham. It was quite good. And beautiful. We found a few more ripening tomatoes and some plants now have green tomatoes, so we have our fingers crossed. Suzanne

Kris, Suzanne and Sherry...quess what? I went out to water this morning and I have some young small tender zucchini that I can pick. Yeah, I am so excited! Can't wait...but I do plan to savor each mouthful...as anything out of the garden has been a long time coming this year!

Kris and Peggy, So good to be back to hear about everyone's gardens and other fun topics! Kris, Glad the girls got to go swimming! We took our 13 year old dog to the ocean tonight, she played in the water like she was a puppy again! Really warmed my heart! Will take her back tomorrow evening so she can play some more before we head back to the N. GA Mtns where we live! Hugs, Ruth
