These turned out wonderful!!!!

LEMON-RASPBERRY BARS

BASIC BUTTER COOKIE
1 c butter 4 c flour
½ c honey ¾ t baking powder
1 egg, separated 1/8 c lemon juice
grated rind of a lemon
Cream butter; add honey, lightly beaten egg yolk; add grated lemon rind and flour mixed with baking powder. Add lemon juice. Spread in ungreased jelly roll pan and chill until firm (approximately 30 minutes). Bake at 350° for 15-20 minutes. Score surface for bars and let cool completely.

LEMON-RASPBERRY TOPPING
1/3 c lemon juice grated rind of a lemon
2/3 c honey 1-1/2 c dehydrated raspberries
1 packet ChillOver powder 1-1/2 c dehydrated raspberries
In a medium saucepan, whisk together ChillOver powder, lemon juice, and honey. Bring to a boil. Reduce heat and cook on medium-high for 3 minutes, stirring frequently. Remove from heat, stir in lemon rind and raspberries, and set aside to cool. In a large bowl, beat whipping cream until it holds stiff peaks. Fold cooled ChillOver mix into the whipped cream.

Spread the lemon-raspberry topping evenly over the pan of cooled butter cookies and refrigerate until set. Cut bars and enjoy.

I love using ChillOver powder for all of my canning jams and jellies. It works out wonderfully. This past weekend, I canned about a dozen jars of marmalade using oranges from my own tree and the ChillOver gave it jam structure without making it overly jello-like in texture.

Sherrilyn, those lemon-raspberry bars sound delicious!

I got my magazine and realized it had been 15 years. Dug through my magazines and laughed, smiled and cried while I read. Then a flash bulb went off in my brain, "AHA, Happy Birthday!" I am glad you liked it.

The marmalade sounds wonderful. Please share a recipe. :)

The bars turned out wonderful. The raspberries were from my parents patch. My mom put up nearly 5 pounds in one picking and begged me to come clean her out, so I obliged. The lemon was the lone lemon I got from my lemon tree. It grows in spite of the Washington weather and is currently wintering in the garage, waiting for warmer and longer days. Someday I will have a greenhouse for my more exotic plants, but the shop needs to be built and the well house repaired first.

Life is good....

I got to try Sherri's Lemon Raspberry bars. Beyond just good--they were incredible. You need to come to our chapter meetings!

For tonight's chapter meeting we have:

Chocolate Moooos

1-3/4 C whipping cream
10 ozs organic semi-sweet chocolate chips
3 ozs strong chai or coffee
1 T St. Elizabeth Allspice Dram or dark rum
4 T butter
1 T vanilla
1 t ChillOver powder

Chill 1-1/2 C whipping cream in refrigerator. Chill metal mixing bowl and mixer beaters in freezer.

Combine chai, butter, liquor and ¼ C whipping cream in small saucepan. Wisk in ChillOver powder and bring to a boil, then reduce heat and cook on medium for 3 minutes, stirring constantly. Pour mixture into double boiler. Add chocolate chips, heating just enough to melt them. Set aside to cool, stirring occasionally until it is just above body temperature.

In chilled mixing bowl, beat remaining cream and vanilla to medium peaks. Stir ¼ of whipped cream into chocolate mixture. Fold in remaining whipped cream in two doses. It’s ok if there are streaks, just don’t over work the moooos.

Spoon into pretty dishes and chill for an hour. Eat and enjoy!

I made the coffee and rum version last weekend with 12 ozs of chocolate. I licked the spoon on this one and I am excited. The sample tasted great!!!

We had an awesome dinner at our chapter meeting last night. Sherri brought a root vegetable bakeover that was so delicious and was enjoyed by everyone. The taste wasn't expected. It was a great blend of flavors. I made what I call Country chowder: pork sausage, corn, potatoes, peppers and carrots, topped off with cream. Sherri's chocolate chillover was thick, rich and so decadent. A huge hit, even hubby got a bowl. He loves our chapter meetings. And, Mary Jane, you're always welcome! We share knowledge, do fun stuff and always ending up laughing a lot!
Next month we have a rare opportunity of a teacher who's an expert at bobbin lace coming to teach us. She's bringing kits for all of us to learn this forgotten art. She's not charging us a red cent. Love how people share!
