I remember eating hot water cornbread as a child, but the recipe wasn't handed down. Does anyone have a recipe for it? I would like to give it a try.

The way my mom and grandma made it was with boiling water, a little flour and cornmeal. And maybe a little salt. It was then made into patties, fired, then sliced open, and adding a slice of cheese.

Betty thanks for the recipe. I remember fried cornbread too. Never put the two memories together.

My momma and grandma made a cornmeal dish that we called Couche Couche (cush cush). it's like a hot cornbread cereal. We make it with either hot water or with milk. I like it with milk....makes it creamy. Yum. It's also got a bit of sugar in it.
I don't know the exact measurements. I just eyeball it. Combine together: 1 cup corn meal 1/2 cup water or milk 1 T sugar pinch- 1/2 tsp of salt 1/2 tsp baking soda
Heat oil or butter in iron skillet. Put in mixture and stir often. I like to add more milk as it cooks to make it creamy. But, you can let it develop a crust on the bottom and make it more like cornbread. Eat as is or top with some syrup or molasses. OMG! YUM!
As a young cheerleader back in Cajun country, we had a cheer that went like this.... Hot Boudain Cold Couche Couche Come on team and let's push push push

Betty, 'mush' certainly describes it! But oh so yummy.
