Today I put up 7 pints of lentil soup and 2 jars did not seal. The recipe is from my The Complete Guide to Pressure Canning and it's the first recipe I have ever seen that called for measuring the lentils & Veggies with a ruler. I used a 6" metal slide ruler that I have used for over 50 years to hem. I used a slotted spoon to put the lentils/veggies in the jar; measured the 2"; and filled the jars with the soup. Quarts called for 4".

Sara - that is interesting! I have never seen a recipe for canning that measures the ingredients in inches before.

Easiest way to explain her reasoning is the ratio of lentils and veggies to liquid. There were floaters of lentils & veggies in the liquid.

Got 6 pint jars of pickled beets canned up a couple days ago. Going to have my husband try them before making any more. I made them once, years ago. STill dealing with rain here. I started trying to get the garden weeded, a slow process. The chickens enjoy the weeds.

Michelle, pickled beets are a favorite of mine. Weeding is no fun, but it has to be done, and I am behind on my weeding.

Today I washed a box of Ball lids to have ready for next canning day. Two of the lids had small dents around the edges of the metal. Trashed them. Has this ever happened to you?

That's awesome that this thread has been going that long!

I've had a couple bad lids over the years but luckily, not very many. I do the same - trash them. Every now and then I get 13 in a box!

Nancy I have never made peach butter either. Hope you like it. I do like peach jam though, yum. I canned a couple of batches of green beans with my mom. I am freezing my beans now, for one of my sons. Will be canning the rest of those beets one of these days.

Tara enjoy your tomato sauce in different recipes. My tomatoes are starting to change color now. Picked crab apples yesterday. My husband would like syrup made and I want to can some for pectin. Will do them in the steam juicer to make life a bit easier. Happy Canning everyone.

I hear you Sara! I have been so non productive, but thankfully we have had highs in the 70's and lows in the low 60's, so I have gotten so much done.
I finally spread some mulch that had been sitting there in the blazing sun Friday. My husband drove by me in the gator and looked at me. I said "Hey it's Aug 1st about time to get the mulch spread!" He said, "I have a feeling this has to do with the cooler weather". Um, yes it does!

Take care Sara. Check in when you can, as we all enjoy your thoughts and wisdom and your wit. Lisa it sure helps alot when the weather cools down. We have been cooler for a week now and we do enjoy it. The animals are much happier too. I might go out and pull the rest of the beets today, will see.

Michelle, my husband loves it! We also make peach jelly. It is so good! I will be canning plums also and making fruit leathers from frozen puree.

I believe I have one jar of peach jam left. Just might be going down to grab that for breakfast, yum.
Nancy it is nice to have canned plums on the shelves.
I got another 6 pints of pickled beets yesterday. Along with freezing shredded carrots, zucchini, and broccoli. Oh and one bag of string beans, they are slowing down. Something is eating on my carrots. They chew the around on the top of the carrot. I want to freeze chunked up carrots next, for soups and whatever. Happy Canning everyone.

Yesterday I canned 10 pints of pickled beets, 7 pints of pickled banana peppers, and 3 pints of raspberry jam. I had a half a pint of banana peppers and a half a pint of raspberry jam that went in the fridge for us to eat now. I also have a lot of cucumbers and decided to try one as sliced pickles. I put it in the fridge for us to try before I can them but the verdict wasn't very promising lol. I think I will need to find another recipe.
