Hey all! John and I have been doing “Soup Sundays” for a few weeks now. We are loving it! It’s definitely soup season here now. :) If you have a favorite soup recipe, please consider sharing it here! :) Thank you so much! :)

Great idea, Karen! We like hearty winter soups with some cheesy toast or garlic bread. One of my favourite soups is a Cauliflower & Bacon Soup. I don't really follow a recipe as such, but you just saute a brown onion & bacon in some butter. Then I add a whole cauliflower broken into pieces. I put in enough chicken stock to cover the cauliflower. Bring it to the boil, then simmer until the cauliflower is soft. Then add enough cream to your liking & puree the mixture in a blender (I usually have to do this in batches). I like to add salt at the end depending on how salty your chicken stock is.

Cheddar Chowder
2 cups water 2 cups diced potatoes 1/2 cup diced carrots 1/2 cup diced celery dash of salt and pepper
White Sauce 1/4 cup butter 1/4 cup flour 2 cups milk
2 cups shredded cheddar cheese 1 cup cubed ham
Combine water, potatoes, carrots, celery, salt, and pepper in a large kettle. Boil 10-12 minutes. Meanwhile make the white sauce by melting the butter. Add flour and stir until smooth. Slowly add milk. Cook until thickened. Add grated cheese to white sauce, stirring until melted. Add cheesy white sauce and ham to vegetable mixture that has NOT been drained. Cook until heated thoroughly. Enjoy!

We like Hamburger soup! This is the quick version.
1 pound ground beef
2 teaspoons Kosher salt
1 teaspoon coarse ground black pepper
1 yellow onion , chopped
8 ounces tomato sauce
4 cups beef broth
14.5 ounces diced tomatoes , do not drain
1 tablespoon Italian Seasoning
16 ounces frozen mixed vegetables , (peas, corn, carrots, green beans)
Add oil to a large pot or dutch oven on high heat.
Add ground beef, onion, salt, and pepper, breaking it apart as you cook it until browned, about 6-8 minutes.
Add in the tomato sauce, beef broth, diced tomatoes, and Italian seasoning and stir well.
Bring to a boil, reduce to low heat and cook, uncovered, for 20 minutes, then stir in the frozen vegetables and cook for 15 minutes.

At our house, we make soup from leftover stuff. When we put dinner away we put the half servings of veggies, meat, potatoes, rice, mac and cheese, etc. into a large freezer container. When we cook chicken for burritos or salads, etc., we save the broth for soup making. When there is enough stuff in the freezer container and enough frozen broth, I make what my boys have always called "garbage soup". They love it because they know that some of their favorite things are in it! It is never the same, but always so good! We make a pan of biscuits to go with it and we eat to our hearts content! We started making it to help with the food bills and have just continued to make it. We don't waste food here!

Heather, I have that same recipe and it's an extended family favorite! My mother in law makes it all the time for our family get together. Karen, you should definitely try this one and add a Bundt bread on the side.

Nancy My mom used to make what we called "refrigerator soup". She would take what was leftover and suitable for soup, throw it in a pot and add broth and seasonings. Was always so good!

That's so funny Krista! We started making it when I was a teenager. Both my sisters won blue ribbons at the county fair with it for 4-H. Not sure where we originally found the recipe but it was a keeper :)

Going to try out the cheddar chowder this coming week. Wondered if I can put it in the crockpot. Would love to have it ready after services Sunday. Maybe I could cook it up and just keep it hot in there.

Denise, I would just make it before and then keep it warm in your crock pot. I pulled my recipe out and it's a tiny bit different. Mine calls for 1 and a half cups of celery instead of a half a cup and it has a 1/4 cup onion. But other than that they are the same. I actually got all the stuff to make some this week as well. Talking about it sounded so yummy!

Tomorrow the crock pot will have shredded potatoes,, 20 oz bag, chopped onion, chopped peppers, chopped precooked bacon ( or chopped ham, sausage), adding in vegetable broth, chicken broth works too. Seasoned with thyme, a wee bit or red flaked pepper. Cooked on LOW at least 6 hours. You'll be able to stir up the potatoes until they're smooth, then add s & p to taste and some cream, half and half or milk to make it creamy. Very hardy and filling soup. This soup is always open for variations. I like the idea of soup Sunday. We have a college football game to watch so I love doing a crockpot dish.

I use whatever colored bell peppers that are in the fridge. I always buy bell peppers. Nancy, that's how my Nana made soup. Always different and always so darn good.

Well... I was going to add some of my favorite soups,, but heck!! I think I will just come over to all of you gals house, seeing's how your making soup,, I will be the volunteer soup taste tester!! heeheeheee!

The cold weather is perfect for soups. We enjoyed potato chowder for lunch and I portioned out Lebanese style lentil soup for lunches.

I love soup! I could eat every night, but hubby isn't as into it as me. I'm going to make some of these soon, as we are dipping into the single digits. Saturday night I made mushroom curry soup with potato stuffed sourdough flatbread. A bit of work, but so worth it, and SOOO filling. |

1 package of ground mild sausage (or spicy if you prefer) Brown it before adding veggies Red pototate with skin Celery Carrot Garlic Powder Vegetable broth

I made a zucchini soup on Wednesday. It is thick and creamy and tastes pretty good. All 4 kids finished all their soup. That means it's good lol! This soup will be a good way to use up lots of my frozen zucchini from my freezer. I also made some homemade garlic parmesan bread sticks to go with it.
