My kitchen has been busy lately. Yesterday I canned 18 pints of green beans and 5 pints of salsa. Today i am starting a crock of sweet pickles and pickling sweet banana peppers. All will be appreciated this winter so I don't have to go to town.

Not really a kitchen post but I found a little BHG cookbook for free at a yard sale today. Its only about 4x6 but I look forward to reading some new recipes.

Julie, We love banana peppers. All those things and all the hard work pays off in those cold winter months!

Today I need to go down and take stock of what is left in the basement in the way of canned goods. Need to get my jars up and cleaned for use. Also need to do the same in the pantry and freezer again.

Have 30 lbs.of tomatoes to turn into salsa today and possibly sweet pickle relish. I also have a couple of zucchini that somehow escaped my last picking that I will turn into lemon zucchini bread as well. It is a drizzly, cooler day so the windows are open and it feels so good.

How wonderful to have a cooler day to throw open the windows and can and bake to make use of all those delicious veggies!!

The past two weeks, one grocery store has been caring Ginger Gold apples from the orchards of North Georgia and Western Carolina. These are my favorite early apples too! They are only here for a short season but they make good cooking apples and a nice tart eating apple. There is an apple crisp recipe on the side of the bag, I noticed, so last night I tried it out with the apples. WOW, it was delicious!! And the Ginger Golds stay firm and don't turn all mushy which made the crisp even better. This was the simplest of recipes too.

I have been eating my Ginger Golds so quickly that I don't know if I will get to make anything with them..LOL!
The peaches I got at the same time were a disappointment. They are big and really spoiled quickly. The were hard when we got them and they still are even though they are going bad. They aren't very sweet either.

Denise you might be able to rescue your peaches. The last four that I peeled. All had something going on around the seed. I peeled them. Then I quartered them then cut away any bad areas. Then I cut them into wedges as usual. I put them into two wide mouth pint jars with a teaspoon of sugar. Them after spending a night in the fridge they went in the lunch box.

We are still eating them but the part that isn't bad is still hard and a bit green.

I made butter today. I had some organic expired cream ... it was, amazingly, still good even though it had a date of July 2020. It had never been opened. It's a great feeling to not waste. Now, thinking about what I will do with the butter milk.

Cheers!

Fall Supper! My family loves sauteed onions with anything! My Holly's favorites. She doesn't have to work nights anymore so we can do family suppers more often.

I love to cook onions, new potatoes and whatever, usually some link sausage together. I do not love link sausage...but since hubby likes to buy the stuff...I must cook it for him.
I love steamed cabbage too!
In the summer I cut up onion, new potatoes, and yellow squash, to fill a big bowl, then I add salt pepper, and cornmeal...give it a good shake to coat it and fry it in a bit of cooking oil and butter.
I could eat this twice a week...but my husband hates it!

A big pot of fresh green beans cooked with bacon, onion, and garlic. Yum! The two of use ate almost the whole pot. When my Mom made this she would add slivered almonds when it was done.

A pot of chili last night, and a pumpkin pie.
If you have not used Williams Chili seasoning...you should try it. It is near all of the seasoning packets at walmart.
I start with a large onion that I chop, a T of olive oil and carnittas meat.Saute a bit, but don't brown the meat. Then I add a teaspoon of salt, half teaspoon of sugar a big can of diced tomatoes, a can of tomato sauce and almost three tomato sauce cans of water. Put the lid on turn the burner to simmer and let it cook away. Last night it cooked for three hours. I know I know the package says to cook it for 15 minutes!...but that is for ground beef or chili meat. It is so good made with the meat I'm using. No Heartburn! Wow! No thick orange grease!

Last night, I made White chili and Sweet potato biscuits for dinner. Instead of making individual biscuits, I put the batter into a small loaf pan and baked it that way. Then we could slice the amount that we wanted and the rest stayed fresh. I kinda like that idea for a change because biscuits can dry out quickly but the loaf style is holding up better as of today at lunch we we ate left overs.

You girls are making me hungry!
Winnie, how long did you bake your biscuit dough in the loaf pan?
Have any of you ever had green beans, new potatoes, bacon and onion? So yummy!

Debbie, I baked it at 450 degrees for 15 minutes. It came out still moist inside but lightly browned and crisp on top just like a biscuit. Try it sometimes and see what you think.

Thank you, Winnie! I will give it a try. I like the idea of slicing it and having it stay fresher.

I've been hiding in my kitchen ... hanging on to my peace, as Sara would say. Tried my hand at making pitas, again. You know, I stink at pitas. They may look good in the picture but they did not open.

So I turned them into pita chips ... yummy

I also made an attempt at flat breads ... I don't stink at flat breads! lol

They freeze very well and thaw in no time. They will be a staple in my freezer.
Yesterday I made bruschetta and enjoyed it on the pita chips. OMG, delish!

What have you been up too in your kitchen?

I haven't been doing much in my kitchen except trying to find a home for everything. We have decided to purchase more cabinets and countertop. Hoping we can find matching countertop to what we have. Storage is a must in the kitchen for me.
