Ok, i'm all excited...another topic was started about turkey soup, so i thought I'd share what I've canned and I'd love to see what you all have been canning as well. I love admiring all the jars while they cool on the counter. I feel so proud of myself
I've been building up my pantry for emergencies. I've been canning stock and soups and I've started with meat. I like the pint jars because they are great for 1 person, so if the lights are out in a storm, no waste and no worry about saving leftovers. Here's what I've been canning...

Wow Connie,
You sure have been busy!!! Everything looks great. I have not ventured into using my pressure canner yet. I am hoping to after the holidays and I have a long list of canning 'to do's' :)

Wow! And I thought canning season was over! I canned from the garden for 2 years now, but I've never canned meat yet. The soups look delicious!

Great stockpile there, Connie!
I've already started canning for 2014. We had a couple of bushels of apples stored in the basement and since the first of the year I have converted some to longer term storage, apple sauce and apple juice.
I've never canned soups but like to have some in the freezer. I'll have to give this a try.
Each year I can assorted pickles, 2 kinds of relish, tomato juice, tomato sauce, stewed tomatoes, raspberry, strawberry and strawberry rhubarb jam. Most of my other produce gets frozen.

This is a late post to this topic but it brought back memories - My dad who is 93 still talks about the canned beef and pork his mother used to send back with him to college in the 1940's. He says it was the best and that is how they preserved a lot of their meat. It also had a thick layer of fat on top. I have been wanting to try to can vegetable stock but freezing is so easy. I hate to get the pressure cooker out. Yours looks so good. Becky |

I love hearing about the story your dad tells. Just love it. I love my presser canner. I've been using some of the canned meats and stock lately. Even though the plan is to build up some food supply for emergencies, I finding lately that making a 'quick home cooked meal' from the pantry is great. less trips to the store, and i can make quick pot pies (a favorite in our family), or a stew in under an hr using already canned stew meat. the canned meat is very tender and tastes delicious. i also made a quick chicken and dumplings meal and chicken pot pies from the chicken and turkey i canned. one night i didnt feel like cooking so i told everyone to have some of the soup i canned. i made gravies for dinners with the stocks i canned too. i am hooked on canning. i sometimes peek into the pantry as a walk by to look at the jars of food lined up, LOL. i also brought a basket of canned meals ready to eat to my friend who is sick. they appreciated that.
i would love to see what everyone else has canned.

Connie - 'Just wondering how you process your chicken... Do you par-cook it first or cold pack it? Do you use plain water or stock or add bouillon? I've used water, bouillon and raw chicken and it came out fine, but the chicken itself seemed a little dry - not bad at all, just a little dry. I have read if you par-cook it first, it's better, but that seems like a lot of unnecessary work. I'm just interested to know what works best for you, or if you have any tips to share. My foster daughter and I have a ton of chicken coming in in a few weeks that we're going to need to process. We'd like to can some plain (or with broth), and then maybe make some other chicken meals and soups to can as well. Anything you'd like to share would be great! Thank you! Hugs - Nini

I have been canning up my pig lard....love it. also do carrots, potato's , beans, chicken, pickles, squash, fiddle heads,beef. so much more. It is so rewarding and you know what is in it. Happy Canning! Farmgirl sister Deb

Yep, Connie - that's what I did, too... Only I used bouillon granules... Well, guess it turned out how it's supposed to! :) Thank you!

This past summer, I did strawberry jam, blackberry jam, dandelion jelly (recipe on blog), peaches and peach pit jelly, applesauce, grape juice and jelly, pears (plain and vanilla spiced), pear preserves. This fall I did ground beef, chicken, and beef stew. I absolutely LOVE LOVE LOVE to can!
Wife of terrific hubby and mom to 2 teenagers, a bunny, 1 geriatric goldfish, and the best dog in the world!

Hi Connie, I do a lot of canning and even though I have canned chicken and turkey broth for years it never turns out looking like yours. It is rich and golden in color. Can you give your recipe, mine looks clear compared to yours.

Through the year I throw all the bones and spare veggie parts in the freezer. Starting after the holidays Sunday are my canning days. I've been turning everything into broth. Chicken, Beef and Veggie broth now line the shelves. It works out and gives me time to focus on all the other canning in the summer. We also cut up beef in Jan, so I get fresh bones there.

Oops.. I was wrong, Connie.. I didn't add broth or hot water.. just bouillon granules and the meat. I let the meat make its own broth. Maybe that's where I went wrong? Do you think raw packing but adding the broth will make it have less of a dry texture to it, and it would be more juicy/tender?

every year I tweak a little bit what I can, evaluating what is easy to use and what I wish I had more of :) Some of the favorites now are canned ground meat (for us this year it's moose and venison, but beef or whatever is good too) with taco seasoning in it--can just heat that up and have tacos or taco pie or taco salad. . .
another new favorite way is to do chicken in a quart jar, cut it into cubes or bite sized pieces and fill the quart jar half full of meat, then fill it with chicken broth/stock and can it that way. THEN I can just pop it into a pan, thicken it to gravy and have chicken & biscuits or add veggies and have potpie, etc etc.
I think canning is an ever-evolving task :) depending on what your family uses most.
As for right now -- not canning anything today, but planning on canning up a bunch of venison from the freezer that we didn't have time or inclination to can when it was butchered, but now I have the time. :) (VENISON -- I don't love the flavor of venison, but when it's canned--mmmmmm --loses its gamey flavor and gets SO tender!)

WOW Glad I read this. Well this summer I made Dandelion jelly, and lots of jams, strawberry lavender vanilla, strawberry blueberry vanilla rum, ginger papaya pineapple, strawberry kiwi chia seed, peach vanilla, peach lavender, I could go on and on ..... tons of jams! lol
However, I'm getting my first pressure canner with our tax money and can't wait!!! I want to do chicken breast, and ground beef mainly, but stew meat never came to mind, I am doing that too then!

Well, I kind of just made it up myself no real recipe, just strawberries, sugar, pectin, dried lavender leaves, that I crushed in my hands, rum, and vanilla means, I split the vanilla beans, (about 2 or 3 per a large batch-like 10 pints) scraped the vanilla beans of all the seeds I could, then put the beans themselves in the strawberries as I cooked them, I left the beans in till time to put the jam in the jars, then I just fished them out. I left them into one jar and I didn't like that, so now I take the bean it self out, but put as much of the seeds as I can in it. It smells soooo good and is very tasty too!
BTW, I am wanting to can bacon and butter too......
