Put up 8 12oz jars of orange marmalade this morning. All sealed and they do look pretty if I do say so myself.

Since I'm not canning dried beans because of conserving energy I'm cooking a pot of Christmas Lima beans this morning. On one of American Test Kitchen shows on PBS they said to add 1 tsp of baking soda to a pot of dried beans. The baking soda changes the ph of the water and helps to soften the beans. I have been adding baking soda and yes it does help to soften the beans especially if the beans have a thick skin.

I know when I was growing up the "old folks" used to put baking soda in their beans, but my mother never did so I didn't either. Just goes to show one more time the "old folks" were right.

I remember my aunts and mom using baking soda in the beans to soak.

Picked, washed and put 16lbs of cherries in the freezer yesterday. Made a cherry cobbler for dessert last night. So sweet and juicy!
Did 6 lbs of strawberries last week and left a little bit out to have fresh on cereal and make a shortcake.
I love fresh fruit season.

Marmalade sounds delicious but I have never learned how to make it.

Denise, you have been busy in the kitchen. I used the orange marmalade recipe in my 1998 Ball Blue Book. I liked that I prepped the oranges and lemon; made the syrup; added the oranges and lemon to the syrup; and let stand overnight. The next morning, I finished the recipe and canned the marmalade. If you ever want to make it and don't have a recipe I can send it to you, I have your new address.

It's oppressive hot here in northeast Texas so my sisters and I are grilling at 6:30 in the morning. Should be only 76 I'm taking kabobs with bison sausage & marinated veggies and grass-fed hamburger patties. One sister is doing chicken and hamburger patties; the other is steak and bologna. We will share all our goodies and should be enough that we won't have to cook for a while.

That sounds like fun sharing cooking for meals. It has been so hot here too. I put off a spring/summer garden opting to plant a fall garden. So far just a bucket garden going.

Back from a vacation, and my "camp kitchen" creations turned out good in my camp dutch oven. Made a hash brown breakfast, pizza, lasagna, Indian fry bread, pineapple upside down cake, and cinnamon rolls. We did have tradional hotdogs, brats and hamburgers and smores too. We did eat good!! The trick is to have mixes made up and ready to add liquid or whatever to. Makes cooking pretty darn easy. Nice to be back home!

Denise, I have done cake mixes, brownie mixes, pancake/waffle mix, quick bread mix to name a few. I have an old book, More Make a Mix Cookery. Lots of recipes to make ahead. Basicly just putting together the dry ingredients and adding wet later.

Denise, I am trying to cut out wheat flour, so I make a cornbread mix using cornmeal and almond flour. It took a couple of pans of cornbread for me to work out the ratio of almond flour to cornmeal that I liked. Makes four pint jars. I just use two jars of mix if I want more cornbread.

Michelle, I have a book on mixes too. I should go through it and see what mixes I can substitute almond flour for the wheat flour.

Yesterday was a good day and so far, today looks like I will be having a good day too. I received the fermenting lids and rings that Lisa told me about so yesterday I put up a batch of snap peas & carrots in a quart jar. Today it's brine pickles in a quart jar.

Hadn't planned on harvesting my herbs, letting them go to bloom for the butterflies & bees, but the sage was being overgrown on both sides by oregano and Syrian oregano. I cut both back this morning and they are drying in my Yellow Rose Cottage.

Michelle, somehow, I missed your post. I love the new fermenting lids. I used them first to make snap peas and carrots and must admit I did not like it, not fit to eat so I trashed it. Next, I made 3-day brine pickles and really liked them. This morning my second batch of 2 quarts of brine pickles was ready. One quart had fresh thyme which was okay but needed more thyme. The second quart had oregano which was very good.

The brine pickles are so easy because I use 'bag of mini cucumbers' from Aldi and each quart jar will hold one bag of mini cucumbers. I do peel the cucumbers because I have never liked the peelings.

Sara,
Did you do the carrots together with the peas?
I've done carrots with garlic and ginger and they were so good!
The snow peas I did were my favorite of anything, except maybe the brined pickles. I just did them with the salt and dill.
I'm glad you like the lids!
