My MIL gave me a bag of tomatoes yesterday. 2 pints and a 1/2 pint of tomato sauce for my pantry.

Sylvia, that sounds yummy! What do you use that jelly on? Kind of sounds like it would be good on ice cream.

That is a yummy sounding jelly. Will have to look for a recipe. Yesterday I canned 16 jelly jars of strawberry, and raspberry. I used frozen berries, and my crab apple pectin. Happy to report all have sealed. All are nice and firm too.

My daughter brought me a box of apples from her tree last week so now there are eleven pints of applesauce on the counter. All sealed. There was a dish leftover for me to enjoy for dessert.

Judith, All the apple sauce sealed, priceless! I have potatoes I have to start going through and processing. Pull out some to plant in the spring too. I want to try dry canning french fries, thanks Lisa for the idea.

Good luck with the potatoes! I didn't grow enough of them, I'm already out of fries :( I'm going to be getting the canner out soon and make some taco soup and maybe some spaghetti soup.

Meals in a jar are always great to have on hand. Farm chores took care of a few hours, so never got potatoes going. I did go through them, and have a freezer basket to use. Once the canner is going I can run out and clean the waterer out for the cows.

| Michele you are always so busy! I haven't canned anything lately except a bit of broth, but I am amazed every time I run the dishwasher at how many empty canning jars are in there. I am definitely using what I canned! |

Canned the french fries yesterday. Put a tsp of bacon grease in with them. All four jars sealed. Popped one open to try last night. I did them in the air fryer setting on my toaster oven. They did crisp up very nicely. I grow yukon gold potatoes. They are definitely convenient to have. Not sure I like the canned flavor of the potato that comes through. I will probably just continue to freeze the french fries. I can some potato chunks, which are ok, but its the canned flavor that I am not great with. Being able to process potatoes is a good thing, instead of them going soft and throwing them out. Wish I had a nice root cellar or cold room. Lisa it is so nice when you see your using jars of canned food everyday! I think the same thing.

Judith I soak the fries for an hour or two, then blanch them for 8 min, and freeze on cookie sheets. Once frozen I put them in freezer bags. I do put parchment paper down, so they come off the cookie sheet easier.

Got the water bath canner going yesterday. My mom is visiting with my aunt in AZ and she has a lemon tree. So they sent me lemons. Zested first and then squeezed out the juice. 7.5 cups of juice later, and I canned lemonaide concentrate. Yum. Glad to have the opportunity to do this.
