Krista, great job on putting up all that chicken. Will be great to have on hand for quick and not so quick meals.

Michelle, I'm feeling better today - it comes and goes. I know cooking syrup has to be hard but so rewarding. Enjoy your hard work.

I have a question ladies. Is it safe to do chicken broth in a water bath canner or should that be done in pressure cooker? In a group I'm in someone said they did it in a water bath. I thought low acid is supposed to be pressure canned.

Denise, everything I have read about canning chicken broth is it is done in a pressure canner.

I have seen recipes for bone broth with vinegar done in a water bath canner. The vinegar changes the ph from low to high.

I was always told no meat or meat products in a water bath. Also most veggies. Fruits and tomatoes in a water bath and now with all the low acid tomatoes you have to add lemon juice or vinegar.

That's what I thought Sara. I just wanted to check with you all and see.
Judith I was always told by my mom that anything with meat was low acid and should be done in a pressure canner.

Canned 7 pints dried pinto beans today and they all sealed. I had a case of 12 oz Ball wide mouth jars with lids & rings that had not been opened so I used the lids and rings for today's canning with Ball jars.

I'm not canning but I am awaiting my heirloom bean order that will be do in the coming days, it's coming by USPS so who knows when it will get here. Some of my favorite beans are back in stock, eye of the goat, Jaccob's cattle, and baby green Limas. When I am ready to can, I think I will start with the eye of the goat beans, they have been out of stock for over a year.

Hope all your jars seal Sara, And enjoy your beans. We finished up the syrup season, and no other canning going on. I should get some soups going, as I am out of those for quick meals. Or as I have been sick lately, sick meals. Darn cold has gotten me.

Sorry you have been sick, Michelle, colds can make you feel miserable.

Soups are always good to have on hand. I've been making a lot of egg noodle soup with one pint of my chicken or beef broth and egg noodles. Makes enough for two servings.

Put-up 7 pints eye of the goat heirloom beans this morning and they all sealed. Eye of the goat beans are in the pinto bean family.

For you under 80 Farmgirls "put-up" is the term I grew up with for canning.

Sara- That is great when all the jars seal. A satisfying sound, pop. I had canned beef stock a while ago, and it was the craziest thing. They popped constantly when I took them out of the canner. And they did it for a while. I thought, oh boy these are not going to seal, but they all did. that is the only thing that has ever done that to me. I have been using alot of Superb lids now. They are twice as thick/heavy as the ball or kerr. I have been having good luck. I do tighten the rings on them pretty tight.

Michelle, I bought Superb lids after Lisa told us about them. I still have Ball & Kerr lids to use before the Superb lids. With this canning I used Kerr jar, lids, & rings.

I put-up 7 pints of baby green Limas today and they all sealed. Used Superb lids with Kerr wide mouth jars. I am out of Kerr wide mouth lids but have plenty of the Superb. I like to add green Lima beans to veg soup.

Sara, I am glad you had success with the Superb. I am like you, I have several others, but I have used the Superb here and there. I like the heavier feel, and that they are US made.
I need to get busy and can some beans. I am out of canned beans, but have plenty of dried. Need to get my larder restocked.
I also noticed I have a few chicken carcasses in the freezer, so broth awaits!

Lisa, what's great about canning dried beans is we can wake up one morning and say today is the day to can those dried beans. You reminded me I need to can chicken broth so I ordered 4lbs of chicken wings to be delivered today with my weekly order. And happy to say the wings are on sale, $6 off. I seem to use the chicken broth as fast as I make it.

Yesterday was a rainy day here. So what do you do on a rainy day? You take a canning jar inventory and organize your canning shelves.
Took a bit, but glad I got it done. Even got my empty jars organized by size, lol.

Well done Michelle. I do like to look at and admire organized shelves or pantry.

Making chicken broth today to put up tomorrow. I fill my canner with water & jars the day before the day I can, makes life a lot easier for me on canning day. I also make sure I have enough washed lids, if not I wash them and when dried put in a zip-lock bag.

Great success Sara. Also a good tip about keeping your jar lids washed and ready. Reg sized jar lids fit nicely in a pringles can.

I haven't had Pringles in a very long time but may just have to buy a can for my lids. Would be neater than a baggie. Just like I need an excuse to eat chips.
