Great job Sara.

Heather, our season is over for us. It was an up and down year. Too warm, too cold, and a few days of just right. We did get 13 gallons of syrup, so plenty for two families. We finished cooking last Tuesday. Have everything cleaned up and put away. We still have to clean out sap tanks, which we will do today. Was waiting for nicer weather to do that. Always nice to be done. Hope you got lots of syrup also.

13 gallons! That's a lot of sap to boil LOL! I didn't get nearly that much, but I'm very happy with all the jars I have from my 4 trees :) Now I just have to slow down and quit using so much so it'll last a bit. I just made some cookies using the syrup instead of sugar.

Yesterday I canned noodles. I vacuum sealed them actually in a canning jar. I made noodles, dried them in my dehydrator and then vacuum sealed in a jar. Will see how this works out. I have been watching youtube and Homesteading with the Zimmermans, cause I could not pass that one up. It has been filled with great ideas, and she does things the way I do things. I hope to try lasagna noodles today.

The lasagna noodles turned out great. I do have them vacuum sealed in a gallon jar. Usually I made noodles and used fresh. This is the first time trying to keep them longer.

I am ready to get started canning again. Going to try sloppy joe mix. I need to start making some room in my freezer for pork that is coming in May. Hoping this will make some quick meals during the busy summer.

Sloppy joes do sound good!
I'm a boring canner. 5 pints chicken broth from a small carcass that I had in the fridge. Put it in instant pot with scrap vege and PC for 2 hrs, left on warm overnight, strained and canned. If any of you are not familiar with soup socks, they make the canning of any broth so much easier. Basically, a mesh style bag that you can put the carcass and vege in, tie it and put in pot with the water. Makes the straining and clean up so much easier.
Also 4 quarts pinto beans and 4 quarts white northern beans. And Sara, everything sealed!

Sara hope you are feeling better soon. Take care of yourself.

Lisa I have never heard of a soup sock, that would be very very handy. I just looked them up. Looks like a cheesecloth, but it is stretchy cool. The instant pot sounds like it makes things pretty easy. Having all the jars seal is priceless!!

I am going to wait till Monday to can, supposed to be rain coming in that day. I want to do another batch of baked beans, different recipe though. So we have been eating the beans I canned and I had a can of boughten beans that I had opened one night. Oh my goodness. My homemade ones are so much better after I doctored them up. I could not believe the difference.

I have been watching you tube in the evenings. I found Homesteading with the Zimmermans. Well I could not pass that one up, since that is my last name too. I have really enjoyed it, and have gotten good tips and recipes.

Lisa, good job on the beans and all jars sealed. Thanks for letting us know about soup socks, never heard of it. I ordered one pkg for my sister in MA that makes chicken broth and one set for me.

Michelle, thanks for the good wishes. I filled my canner yesterday with water and jars in hopes of canning in a day or two. Rainy days are perfect for canning. Today the humidity is 93 so it should be raining. lol

It's chilly and rainy here. I'm going to a plant swap at the local thrift and then I'm thinking chili. Plenty of tomatoes and beans in the larder. I have a pack of ground venison that my friend gave me, so I'll probably use that.
Michele, would you mind sharing your baked bean recipe? I know you had mentioned that before, and it piqued my interest for sure.
Wow Sara, that is some humidity!

Lisa I will take a picture and email you the recipe I wanted to try. Also if I find it, the recipe I did make that needed to be spiced up a bit but was still good. I use great northern beans.

Lisa, no I am not up at 3, hopefully, haha. Usually after five though. I am a morning person. Today it is after 6, was awake listening to some thunder and rain earlier. My cow is recently dried up, so taking it a little slower here. Got to get the chickens opened up and fed soon.
Got 8 pints of sloppy joe mix canned and sealed yesterday!! Had a bit left over for supper and it is pretty tasty. Different then how I normally make sloppy joe, but that is good.

Michelle, good job on your baked beans. That pesty un-sealed jar is good for something. lol

I ordered beef shanks to make beef broth to be delivered this morning if they have it. If they don't, I'll can beans.

They had beef shanks so I will be making beef broth today in my spanking new soup sock, thanks to Lisa. Hope to put up in the morning.

Sara, I hope you like the soup sock. I think some of them allude to being one time use, but I reuse mine. I rinse the best I can, soak in soapy water in a bowl overnight, rinse, dry, and reuse.

Lisa, reusing the bag is a great idea. I will give it a try another time. It wouldn't work with the beef shank broth because of all the fat. I didn't trim the meat but will skim off the fat in the morning before heating up the beef broth. Finally got the kitchen counter cleaned off and all dishes washed. I can't believe one little old lady can make such a mess making broth.

I hear you Sara! Sometimes when I am cleaning up all the bits I wonder the same thing. But I can't bear to buy it when I can make it from scraps and cheap meat cuts or soup bones.

Lisa I used the recipe in the book. The canned baked beans are pretty good. I used a little too much molasses I think. I had measured out the wrong amount, and well you know molasses......... what a mess. I did get some back in the jar though. I will make and can more. Definitely alot of flavor.
Sara hope you got your stock all canned up with no issues.
