Put up 7 pints beef broth and all jars sealed. Doing the canning happy dance, somewhere between country line dancing and oh, bless her heart.

I think the happy canning dancer should have canning lids on a string like a tambourine or maraca

I made the baked beans Michele! The sauce tasted savory. I didn't have molasses, but did have sorghum, so I used that. It said it could be substituted, but to cut the sugar somewhat. I did that and also added a bit more ACV. Not sure why, but I only got 4 pints, with a bit left over. All sealed, so Sara can do her canning dance for me, until we meet so she can show me her steps.

Hope you like the bean recipe Lisa. Glad they sealed for you too. My jars were not overly full either. I need to make a note on the recipe to add just a handful more of beans to fill the jars a bit more. Dance on canners!!

Michelle one thing about beans you can always add more or less depending on your personal taste. When I put up dried beans, I use less beans because I like plenty of bean broth.

The next time I make I will add the whole pint of chicken broth and a few more beans; hopefully that will be enough for the extra pint.

I've done the happy dance twice now! All my jars of violet jelly and beef sealed :) And the jelly is so pretty:


I found a couple bags of blackberries in the freezer so I'll be making some more jam soon.

Haven't been canning lately, can't seem to string enough good days together to get it done. I have been washing up lids so when I do get back to canning, I will have lids and jars ready to go.

Michele, I've done dandelion and violet jelly before, and the overwhelming flavor has been the lemon that is utilized. Curious to see what Heather says. Both jellies are just so pretty!

Sara - I hope you have some good days soon!

Michele and Lisa - I think the wild violet jelly has a bit of a berry flavor. It's mostly just sweet tasting. I don't notice the lemon so much in the wild violet but boy do I in the dandelion jelly!!! I made it once a couple years ago and still have a couple left. My husband really likes the wild violet so I make a batch every year. I wonder if it's because I really pack the flowers in when I measure for the tea so I get a nice color. Plus I let it brew for about 24 hours. It's fun to watch it change color :)

Hope to put up beans this morning, so far so good.

I have wild violets in my front & back yards, but I don't know if I have enough to make jelly. How much does it take? The flowers are gone for this year but I am thinking ahead to next spring.

Put up 7 pints Bayo Chocolate bean from Mexico today and all sealed. Did not do the happy canning dance since I had no pep left in my step after canning.

This bean is akin to the pinto bean and has a tasty broth, that's why I wanted to try it. Don't know why it has chocolate in its name since nothing is said about it having a chocolate flavor and the color when cooked is on the rosy side.

Just 3 quarts of diced tomatoes. I am cleaning out freezer of tomatoes. I made pasta sauce with dozens of yellow and red cherry tomatoes and froze.

Today's good mood brought to you by a lot of coffee!!!

Tara, I love when I discover bags of frozen tomatoes in the freezer! Makes my canner happy!
Sara, probably similar to the people that think up paint colors; sometimes they make no sense. Hubs man cave is painted Sawdust by Sherwin Williams. It is a deep taupe green. I've never seen sawdust that color. LOL

I'm with you Lisa, some names make no sense at all.

Good job on canning tomatoes, Tara.

My next day of canning will be multi-bean soup with smoked ham hock. Each time I can or cook a bean I add a couple of Tbsp to a jar. I now have a full jar of all kinds of beans, but I don't know how many different kinds, only know it's way more than 9.

Everyone has been so busy canning this and that. I have canned up 3.5 jars of rhubarb juice this spring. 31.5 when I got up this morning. The apple trees are in full bloom, hope it does not hurt them. I did cover up my seedlings and the one flower basket I have. Happy Canning everyone.
