Julie, that cake sounds scrumptious! I would love to be sitting down at your table to enjoy a piece! It is also very cool that you have the original recipe from your Grandmother. What a treasure!

Sara, I would be happy to send you a copy, I will copy the whole envelope so you have an "original" too. Will put it in tomorrow's mail. Just shared a piece with one of my granddaughters and we both agree it was the perfect treat with a glass of cold milk. Wish you could share a piece at my table as well Winnie.

Sara, I have never heard of an electric water bath canner. Pressure canners make me nervous. LOL. I have one but it is old. My mom showed me how to use it years ago when we were canning venison. I used it once since then.

Julie, What a great crop of apples! Your cake sounds delicious! I need to get back to doing some baking again. Now that we have a pastry chef in the family I hardly ever bake anymore. I have a lot of my grandmother's and mom's recipes now. Dad always had this apple cake recipe that he liked to make. I have to look in the family recipe book and see if I can find a copy of it. It was so good.

Sara, thank you so much for the recipe for the beans. I can't wait to try it (maybe this coming week.) My FIL is back up to visit and he bought me a 20 qt stock pot but wait there's more...he bought me a pot stirrer!!! I put this contraption on top of the pot, walk away and while I cook down my apples, tomatoes, broth... I can turn the heat up slightly and it will cook down more quickly without scorching. Can you imagine? What a thoughtful gift. I get tired and sauce can take me 2 - 3 days to cook down the way I like it. I don't have to stand as long and I don't have to keep my arms raised. He's such a thoughtful guy. Anyway it's supposed to come by next Thursday. Needless to say he's been tracking the package at every turn. He's just as excited as I.

I know that this thread is supposed to be other than meals but think of it as - process. I stumbled upon this wonderful website that has 11 meal plans for "freezer" meals. Its 10 meals in 1 hour. You cook 2 each of 5 meals. Eat 1 and freeze the other. The meals have been exceptional and most of the ingredient lists have been 5 items or less. We worked it out to be about $1/serving give or take - can't beat that!! And talk about simple. I'm wondering where they were all my life, LOL.

I do those kind of meals in the days before we start harvest. Than I know I can always get a hot, quick meal on the table when we get in and I am already making it anyway, just as easy to double it. Soybean harvest is just around the corner and corn will follow right after that so adding to that stack almost every day right now..

Cordial Recipe

4 cups berries-do nor crush
White vinegar
Sugar equal to the cups of juice you are using.

Fill a quart jar with berries, shaking the jar to pack more in. Cover with vinegar. Cover. Let sit on the counter for 2 days, I have gone an extra day when I am busy and it is still fine. Strain and measure juice into pan. Add the same amount of sugar. Heat to dissolve sugar. Boil rapidly for 10 minutes. Cool. Serve right away or you can process it in jars to keep. It does keep in the fridge for up to a week.

To Serve:
Mix 1 part cordial to 3 parts water. I just pour a small amount over ice and add Sprite or 7-up.

Cherries, rhubarb, wild berries, blueberries all work well.

The Crockin'Girls put out a couple of cook books. I bought them...one for my DIL and one for grand daughter. 5hey are simple, delicious meals/desserts.

Julie, thanks for the cordial recipe. I'll print it out.

Yesterday I dried turnip greens. Today it'll be honey crisp apples.

Have 4 pints of ranch style beans in pressure canner. Used heirloom eye of the goat beans from Peru. Isn't that name a hoot. The beans make a very good broth. I froze leftover broth in 2 ice cube trays to use in soups and to warm up beans/veg. Waste not want not.

Marilyn don't know how they got that name. They're a pretty brown bean with darker swirls and stripes. They have a good flavor and thin skins which I like.

Sara, I have been planning to dry apples but I have yet to figure out where I put my apple peeler/corer. Tomorrow is another day, though it is already filling up fast. Maybe I'll get to them by the beginning of the week.
