Sometime today I will fill my electric water bath canner to have it ready to pressure can dried beans in the morning. I use the water bath canner when pressure canning to heat the jars and fill the pressure canner. If I find peaches at a fair price I would like to put up spiced peaches using my electric water bath canner.

This morning I'm pressure canning four pints heirloom snow cap dried beans.

Tomorrow is grocery shopping day and peaches are on sale so will see how they look and if I like them I'll get some for spiced peaches. I have a recipe for sweet tea peaches which I also want to try.

Sara, peaches sound wonderful! Ours start to come in here soon. Love fresh peaches. We have a farm down the road that have a lot of orchards around.

The peaches were terrible so not doing peaches this week. Did find ox-tails in marked down bin so will cook them in slow cooker overnight for canning on Sat morning. Bought a pkg of chicken thighs for 39 cents a pound - will cook tomorrow in slow cooker and can Sun or Mon morning.

May can beans in the morning. At Save a Lot I got amber colored squatty Ball pint jars. Reminds me of the time baked beans came in brown jars. I treated myself to four 4-to a pkg jars. When I buy something outside my budget I always tell myself it's a treat. Adds to the enjoyment of getting it.

Sorry you didn't find any good peaches. I used up my blueberries by making cupcakes and topping them with homemade whipped cream and fresh blueberries. They were delicious!

New jars are always a treat to find!

Canning 4 pints ox-tail beef broth this morning and cooking chicken thighs in slowcooker to can chicken broth in the morning.

Today we will be making some mozzarella cheese and butter with our abundance of milk. We may try to make some other cheeses as well. I also have multiiple jars of tinctures going at the moment. We harvested echinacea a few days ago, so I want to get some tincture of that going.

I decided since it cooler! Yay! To make a Peach Bundt Cake from Southern Living magazine! it started out easy..... I filled the pan too full, spilled over in my oven, smoked up the kitchen. I had to open the front and back door, put a box fan in the kitchen to help blow the smoke out.! Had to turn the oven off and clean it, Spoon some batter out and re-cook it. It came out Yummy! Fresh peaches from the Jones Orchard farm stand down the road from me.

We were gifted six to seven pounds of rhubarb... So today we are making strawberry rhubarb crisp and vanilla ice cream for dessert and the rest will be used for rhubarb jam :)

Shannon enjoy the rhubarb crisp and jam.

Pressure canning four pints of pinto beans with un-cured salt pork. Today is the first time to use the amber squatty jars so I feel like a kid playing with a new toy.

Today I bought a new Ball Electric Water Bath Canner on sale at a Habitat for Humanities ReStore. Then on the way home Ed got a text message from his neighbor saying to come and pick grapes off their grape vines. I picked about 2-1/2 gallons of grapes. Now what??? I have never canned or made jelly before. LOL!

Sara is going to send me a recipe she says I can follow. Wish me luck. This will be my first canning effort.

I'd also love to do pickles - bread and butter or dill. Any good easy recipes?

Linda, I highly recommend getting a Ball Blue book. You'll never go wrong using one of them to learn from. I use to make grape jelly from the wild grapes that grew along the fence all our old house.

I have a Ball Blue Book. And I actually found it. That's where my grapes are coming from - along the fence. These are old grape vines - heritage grapes? Jelly making has a lot of steps. I guess the first time is always hardest to start. Once I know what I am doing, I am sure it will be easier.

I am also wondering - can I take shoots from these grape vines to root and start some at my house?

Linda I have answered your last e-mail with a line by line breakdown of recipe - hope it helps.

I would definitely take cuttings and give it a try. I will look through my gardening books to see what I can find out about propagating grape vines. There's always the internet.

LInda, local grapes make wonderful jelly and jam. Like Sara soys, just read up and follow the instructions carefully. You will enjoy the results big time because local grapes give you a flavor that you cannot get in store bought jelly or jam. Breakfast toast is about to get a whole lot tastier!!

The peaches are coming out now. They are the Cling stone but very good. I always wait to do any canning or anything until the Freestone come on. These sure are juicy and they ripen quickly.

Well, I'm halfway through taking the grapes off the stems. That was an entire fix-n-mix bowl. I have one more fix-n-mix bowl to go. LOL! The first one took an hour and I should have been sitting - I was standing and that was too long.

That's interesting, Winnie, that local grapes taste different. Ed's neighbor said these grapes are VERY SOUR off the vine and it takes a lot of sugar. YUM!

Linda now you know why I make juice one day and can another. Sometimes I prep fruit one day - make juice the next day - and then can. The easier I make it the more apt I am to do be able to do it.

My kitchen is quiet this week - maybe next week I'll get back to canning dried beans.

Well. I simmered the grapes and they are ready to squeeze through cheesecloth. I will do that tomorrow morning and make tomorrow morning. The simmering grapes smelled WONDERFUL! I hope the jelly tastes as good.
