My canning is pitiful compared to some here! But... so far I've done tomatoes, grape tomatoes with rosemary and garlic, blueberry jam, blueberry lime jam, and jalapeno pepper jelly. I just got a lot more tomatoes from my husband's stepdad's garden (he just went Russia!! jealous.) and also all of his concord grapes. I'm planning to make freezer pasta sauce with the tomatoes, and grape jam with the grapes.

I used the blank labels, and made my best attempt at pretty cursive. The web site said to just glue them to the lid, but I thought they'd probably get yucky, so I decided to laminate them. They're just the right size that the band holds them in place. I'll probably end up giving some as Christmas presents and just tie a pretty ribbon on the band. I wanted to find something cute so that the jars would be somewhat ready when the time came.

I've been canning everything I can get my hands on. Tonight it was tomato sauce and ketchup. Last few weeks was over 300lbs of peaches (I haven't counted the jars yet, still washing sticky jars), more tomato sauce, first triple batch of vegetable stock, chicken stock, green beans, elderberry syrup, cherries, cherry pit juice, homemade peach vinegar (because I have tattler lids), freezer jams (strawberry a while ago, seedless raspberry the other day), froze blueberries... still on deck is more peaches, pears as they ripen, more tomato goodies (homemade Rotel, V8, more ketchup, more sauce), more vegetable stock, and then it'll be apple time before I know it.

Hay there,

I just love all of your posts with the list of items in your pantry. I have done 5 jars of okra, sliced for soups. And ump-teen jars of tomatoes, diced, for soups and stews. Froze 16 bags of creamed corn and still have peppers and more okra to do. I think the pears and apples are ready now but don't really eat them much or make pies......perhaps I will make apple jelly, I have never tried that.

Keep up the good work. You will be glad you did when its cold outside and you can save money at the store. Plus you won't have to lug it all into the house from your grocery trips.

I am still so busy but so far, we've canned pears, apples, carrots, beets, blueberries and blackberries! If I get another second, I'll count them up! But all of you ladies are amazing! Very inspiring!

~Canned Peaches
~Peach Jam (made with Pomona's pectin, wonderful!)
~Zucchini Salsa
~Cucumber Pepper Relish
~Bread and Butter Pickles with a kick (I added some crushed red pepper and garlic)
~Bread and Butter Pickles
~Apple Pie Jelly

I froze:

~120 ears of Olathe Corn: Corn on the cob, Creamed Corn, and Niblets.
~Strawberries (to make jam with)
~Raspberries (also to make jam with)
~Blackberries
~Blueberries
~Green and Wax Beans
~2 Loaves of Blueberry-Zucchini Bread
~2 loaves of Strawberry-Zucchini Bread

Onto the Kale... :)

I was given some plums so made 8 pt. of plum butter. Just finished 18 pt. of salsa and will do more tomatoes as they ripen.

I haven't canned as much as usual this year, but a few dozen jars of things here and there, but today I canned 66 jars mostly pints, of cactus apples and cactus apple jams. I am only 1/2 done with our bounty. Ran out of lids or I would still be going. The rest are cleaned and ready to can tommorrow. Glad the hard part is done. My sweetie as so much help cleaning and peeling...not a fun job.

Inside me there is a skinny girl crying to get out, but I can usually shut her up with cookies.

I made Plum Butter for the first time last year, my husband absolutely loves it!

Jenny,
I remember trying to make Prickly Pear Jelly when I lived in Tucson. It was a disaster. I used a recipe from Martha Stewart and it came out like candy but too chewy. You are blessed to have a honey that helps like that :)

Oh Sherone, I wish that I had grown some beets this year, I love pickled beets. You are one busy girl!

Peg, doesn't the scent of Apple Butter simmering make you smile? :) Can I ask you what your recipe for Sweet Potato Butter is? I absolutely love Sweet Potatoes and this sounds wonderful!

I also added some Apple Butter to the larder :)

Sweet Potato Butter
adapted from Putting Up

4 c sweet potatoes, cooked, peeled, and mashed (3 lbs sweet potatoes)
3/4 c apple juice
1 c light brown sugar
1 c sugar
1/2 c orange juice
1/2 c lemon juice
1/4 c cider vinegar
2 tsp. cinnamon
1 tsp. vanilla
1 tsp. salt

Cook the potatoes in the oven or microwave until soft, peel them and puree them in a food processor with the apple juice until smooth. Place in a pot with remaining ingredients and bring to a low boil for 10 minutes. Process in a hot water bath for 20 minutes. (see Canning Basics) Makes 3 pints.

Sweet potato butter is great on sandwiches, (I like to add it to a peanut butter banana sandwich) and delicious slathered on grilled meats. It can also be used as a pie filling as I mentioned above. Here's how to do it: Add 1 beaten egg to a pint jar's worth of sweet potato butter and fold in thoroughly. Pour into a half baked pie crust and bake at 350 degrees for 20-30 minutes.

today im canning turkey stock. we went to our local farm stand week thinking we would buy apples for making applesauce..pie filling etc. they wanted 30.00 a half bushel! considering the amount of apples we would of needed...it would of been the most expensive applesauce and pie filling ever made. ive been discouraged about that as I was really looking forward to doing that.

I need to start canning stock or I may try a recipe I found online for turning stock into bouillon cubes to freeze.
