Adapted from a recipe by Robin of Mountain Morning Farm in Spanaway, Washington.

yam souffle

Yam Soufflé Iris flourish

Prep Time: 15 minutes
Cook Time: 40 minutes
Makes: 6 servings

Ingredients

large yams, peeled and cut into 1″ pieces

¼

 

cup brown sugar

½

 

cup butter, softened

2

 

eggs

½

 

t salt

1

 

t vanilla

Topping:

T brown sugar

¼

 

cup butter

¼

 

cup flour

½

 

cup chopped pecans

Directions

  1. Preheat oven to 350°F. Butter an 8″ x 8″ pan or a similar-sized casserole.
  2. In a medium sauce pan, steam or boil yams for 10–12 minutes or until tender.
  3. Mash yams until smooth.
  4. Beat together mashed yams, brown sugar, butter, eggs, salt, and vanilla until fluffy. Place in buttered pan or casserole.
  5. In a medium bowl, combine topping ingredients. Sprinkle topping over yams.
  6. Bake for 30 minutes.
