Fig and Caper TapenadeIris flourish

PREP TIME: 35 minutes
MAKES: 2 cups

Ingredients

½

 

cup boiling water

1

 

cup dried figs, diced

 

cup pitted Kalamata olives, diced

2

 

T olive oil

1

 

T balsamic vinegar

1

 

T capers, drained

½

 

t fresh thyme

8

 

oz goat cheese

Directions

  1. Pour boiling water over figs and soak for 30 minutes; drain.
  2. Combine figs, olives, oil, vinegar, capers, and thyme.
  3. Place goat cheese on a platter and cover with tapenade. Serve with crackers.
