Shirred Eggs FlorentineIris flourish

Makes: 4 servings

Ingredients

Wide-mouth ½-pint canning jars for use as one-serving cooking utensils.

t melted butter

pound fresh spinach

large eggs

T heavy cream

4

 

T Parmesan cheese

salt & pepper to taste

nutmeg (optional)

Directions

  1. Preheat oven to 325°F.
  2. In each jar, pour in 1 t melted butter and swirl to coat bottom and sides; add about 8 small spinach leaves, making a slight indentation in the top; crack 1 egg into the indentation; pour 1 T cream over; sprinkle with 1 T Parmesan; add salt and pepper to taste (and a pinch of nutmeg, if desired).
  3. Place all four jars in a glass baking dish. Pour 1 cup water into baking dish, surrounding jars. Place baking dish on middle rack in preheated oven and bake for 20-25 minutes, or until eggs are set.

*Note: for a slightly firmer egg, place jars in baking dish without water.
