Hearty MeatloafIris flourish
with Ketchup Glaze

Cook Time: 1 hour
Makes: 8 servings

Ingredients

lbs lean ground beef

1

 

cup onion, chopped

1

 

large garlic clove, minced

1

 

cup soft bread crumbs

2

 

cups zucchini, cut into 1″ chunks

½

 

t salt

½

 

t pepper

½

 

cup cheddar cheese, grated

2

 

eggs, whisked

2

 

cups mushrooms, chopped

T butter

½

 

cup red wine

¼

 

cup ketchup

¼

 

cup brown sugar

Directions

  1. Preheat oven to 350°F. Lightly grease loaf pan.
  2. In a large bowl, combine beef, onion, garlic, bread crumbs, zucchini, salt, pepper, cheese, and eggs; mix well.
  3. In a medium skillet, sauté mushrooms in butter for 5 minutes. Add wine and cook until the mushrooms have absorbed most of the liquid. Stir into meat mixture; transfer to loaf pan.
  4. In a small bowl, combine ketchup and brown sugar; mix well. Spread ketchup mixture evenly over top of the meatloaf. Bake for 1 hour.
