Carrot Apricot MuffinsIris flourish

Makes: 12 Muffins

cups flour

t baking powder

t salt

t cinnamon

cup butter, softened

1/2

 

cup sugar

1/4

 

cup brown sugar

eggs

 

cup buttermilk

1

 

T orange juice

1/2

 

cup sliced almonds

1 1/2

 

cups grated carrots

1/2

 

cup chopped apricots (fresh or diced)

1

 

t vanilla

  1. Preheat oven to 400°F. Lightly oil a 12-cup muffin tin.
  2. Combine the dry ingredients in a medium bowl. Set aside.
  3. Cream butter and sugars and beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Add buttermilk, orange juice, nuts, carrots, apricots, and vanilla; mix well.
  4. Add the flour mixture and mix just until combined.
  5. Spoon batter into muffin tins.
  6. Bake for approximately 25 minutes, until toothpick inserted in center comes out clean.
