Mary Shivers’
Iris flourish
Coconut Pound Cake

Prep Time: 20 minutes
Bake Time: 60–70 minutes
Makes: one 10-inch cake

packet (1 tsp) ChillOver Powder

1

 

cup milk

 

cups butter, softened

3

 

cups sugar

5

 

eggs

1

 

tsp vanilla

3

 

cups flour

1

 

cup flaked coconut

  1. Preheat oven to 350°F.
  2. Lightly spray or wipe a 10-inch tube or bundt pan with oil and dust with flour.
  3. In a small saucepan, whisk together the ChillOver Powder and milk. Bring to a boil.
  4. Reduce heat and cook over medium heat for 3 minutes, stirring frequently. Remove from heat and set aside.
  5. In a separate bowl, beat butter with an electric mixer until creamy. Add sugar and beat until light and fluffy, about 2 minutes. Beat in eggs one at a time. Add vanilla.
  6. On low speed, alternately add ChillOver mixture and flour. Beat well on medium-high speed 5 minutes. Batter will become creamy and satiny. Fold in coconut.
  7. Pour into prepared pan.
  8. Bake for 60–70 minutes.
  9. Let cool in pan for 5 minutes. Turn out onto a wire rack to cool.
