Agua de Horchata (Rice Water)Iris flourish

Prep Time: 5 minutes
Cook Time: 10-15 minutes
Makes: 2½ quarts

Ingredients

1

 

cup rice

1

 

t ground cinnamon

1

 

cup honey

water

Directions

  1. In small saucepan, add rice and 2 cups water. Cover and let boil. Turn heat to low and let simmer until water has evaporated, approximately 10–15 minutes. The rice is now par-cooked (cooked halfway), but not soft.
  2. Add the rice in two or three batches into a blender with a little water. Pureé completely.
  3. In the first batch of rice, add honey and ground cinnamon. Add additional water if necessary to blender if puree is too thick.
  4. Strain puree through a fine-mesh sieve and into a pitcher, adding water to help push rice mixture through. Add 2½ quarts of water and mix. Taste and adjust for sweetness. Serve chilled.
