Sweet & Spicy Beef CouscousIris flourish

Makes: 4 servings

Ingredients

1

 

lb sirloin steak, trimmed and cut into 1½″ strips

cup honey

¼

 

cup soy sauce

¼

 

cup minced apricot (can also use dried apricots or apricot preserves)

½

 

t red pepper flakes

½

 

t peeled and finely grated ginger root

1

 

medium garlic clove, minced

1

 

cup mushrooms, sliced

1

 

cup carrots, sliced

1

 

cup red bell pepper, cut into 1½″ strips

1

 

cup whole-wheat or brown-rice couscous

1

 

cup beef broth

¼

 

cup green onions, sliced

Directions

  1. In a medium bowl, combine beef, honey, soy sauce, apricot, red pepper flakes, ginger, and garlic; mix well.
  2. In a 10″ cast-iron skillet, cook beef mixture over medium-high heat for about 5 minutes.
  3. Add veggies and cook an additional 3–5 minutes.
  4. Add couscous and broth and bring to a boil.
  5. Turn off heat, cover, and let sit for 5 minutes or until all liquid has been absorbed.
