Old-Fashioned Mini Applesauce Cake DonutsIris flourish

Ingredients

cup flour

½

 

cup sugar

1

 

t baking soda

1

 

t baking powder

¼

 

t salt

½

 

cup milk

 

cup buttermilk

¼

 

cup applesauce

2

 

T oil

½

 

t vanilla

1

 

egg white, lightly beaten

Gluten-free Conversion

Substitute organic white rice flour (www.BobsRedMill.com) and add 1 additional egg white.

  1. Preheat oven to 400°F. Spray your mini-donut pan with oil or coat with butter and set aside.
  2. In a small bowl, thoroughly combine flour, sugar, baking soda, baking powder, and salt.
  3. In a large bowl, whisk together milk, buttermilk, applesauce, oil, and vanilla.
  4. Fold flour mixture into wet ingredients and stir just until moistened; fold in egg white.
  5. Add 1 T batter per mold, leaving the center peg showing above the batter.
  6. Bake 10 minutes or until dough springs back when touched with your finger.
  7. Remove from oven and cool for 2 minutes, then loosen donuts. While still warm, dip donuts in sugar, powdered sugar, or a mixture of cinnamon and sugar, coating well. Or cover with a glaze of ½ cup powdered sugar and 2 t milk.
