Acorn Squash with Apple Stuffing

Cook Time: 60 minutes
Makes: 4 servings

medium acorn squash

apples, cored and chopped

½

 

cup chopped walnuts or pecans

½

 

cup raisins or currants

T brown sugar

T butter, melted

  1. Preheat oven to 350°F.
  2. Slice the squash into halves lengthwise and remove seeds. Place flesh-side down in a baking dish and bake for 30 minutes.
  3. Combine the apples, nuts, raisins or currants, and brown sugar in a medium bowl and stir to combine.
  4. Turn squash over so that it is flesh-side up. Spoon filling equally into squash halves and drizzle with melted butter.
  5. Bake for 30 minutes, or until squash is tender.
